First just clean the karelas (about 1.5 pound) and rub salt on them to get all the bitterness out. Let them sit with the salt for half an hour and wash them.
Fry them and set them aside.
Now take about 5 medium size onions and slice them. Fry the onions in about half cup olive oil. Once the look light golden brown add 1 tablespoon minced garlic to the onions. Add 2 chopped green chillies now. Stir for a minute. Now add the following:
1 tablespoon salt or according to your taste
1 tablespoon red mirch
1 teaspoon dhania powder
1/2 teaspoon haldi
1/2 teaspoon zeera (whole)
1/2 teaspoon kalonji
1/4 teaspoon whole dhania (crush them in your palm)
1/8 teaspoon ajwain (crush it in your palm)
Stir it all and add 2 chopped tomatoes to the mixture. Bhoonafy the masala and add the fried karelas now. Let it cook on slow heat for 10 minutes. Stir evenly and add chopped cilantro and serve:)
GTG: Same process until bhoonafying the masala and obviously increase your spices by a teaspoon due to qeema. Add the qeema once the masala has bhoonafied well and add the karelas at the very end until the qeema is well done and bhoonafied as well.
I usually add raw onions (cut it in round shape) at the very end cover the pan and let it sit on very low heat for 10 minutes. The best karela qeema, ever!
