i doubt you can find any good recipes for moli's
But you never know... look around for recipes on google

aap karaylay ko lejeeiay phir aap moli ko lein.. doon ko cut karain.. phir aap in ko cook keejeye... how? never done it and i hope never to do it.. stick with simple dishes yaar!!!
ok i would cook it as i cook mix vegetables.. that's the best solution i could come up with ....

Cut the karelas in half and then slice them up in thin pieces. The best thing is to freeze them since it is easier to wash and drain them later. Whether you freeze them or not, sprinkle salt on them and rub them with your hands until they become softer. Them wash them and squeeze them until there is no water left in them. Now deep fry them and take them out of the oil when crisp and brown. Prepare masaala as you would for any other dish adding a litle more tomatoes than you normally would. You can add extra onions to the masaala if you like or if you are cooking them with mutton/beef then you don’t really need extra onions. Make sure the masaala is not watery at all. add the fried karelas and cook ‘bhoon-ofy’ them. You can add a little bit of water after ‘bhoon-ofying’ them if it becomes too dry and voila! You have yummy karelas.

** Karaila Chanay Ki Dal ** - i heard it taste good :)
** Ingredients:**
1/4 cup daal channa (gram lentils)
1/2 kilogram bitter gourd, karaila
. For Frying oil
2 cup onion sliced
1 teaspoon red chili powder
1/4 teaspoon turmeric (haldi)
1 teaspoon salt
1 teaspoon coriander powder
3 medium tomatoes, chopped
1/2 teaspoon khatai powder
3 whole green chillies
Method
- Wash dal in few changes of water, until water runs clear, then keep aside to soak in cold water for about an hour. Drain and boil dal with 2 cups water, until 3\4 cooked and about 1\2 cup water is left. Keep aside.
- Peel the bitter gourd, make a long cut, remove the seeds and cut it into thin slices. Sprinkle the bitter gourd with salt and put it aside for at least two hours. Rub the bitter gourd with your hands to remove the excessive bitterness. Wash with plenty of water and squeeze to remove excess water.
- Fry 11\2 cups onion slices in oil until the edges turn light brown. Remove the onions from the oil with a slotted spoon and keep aside.
- Fry the bitter gourd pieces in the same oil until they turn golden brown. Remove from the oil and discard the oil.
- Heat 1\2 cup oil in a heavy based skillet. Add the 1\2 cup onions and stirring frequently, sauté until transparent but not brown about 3 minutes.
- Add chili powder, turmeric, salt, coriander powder and a little water to prevent the mixture from sticking to the bottom of the pan. Stirring frequently, fry the mixture for few more minutes.
- Add tomatoes and still stirring frequently, fry mixture, until the tomatoes are soft, about 5 minutes. Add a little water, if necessary, to prevent the mixture from sticking to the bottom of the pan.
- Add dal with water, mango powder, green chillies, fried onions and fried bitter gourd to the tomato mixture. Mix well, reduce the heat, cover and allow to cook for about 15- 20 minutes or until the bitter gourd is tender and all the moisture had dried up.
- Serve with Roti or plain boiled rice.
*This recipe serves 8 people.
Preparation Time: 20 minutes.
Cooking Time: 30 minutes.

2 tablespoon coriander leaves, fresh

1. Peel the bitter gourd, make a long cut in it, take out all the seeds and cut into thin slices. Sprinkle salt over it and put it aside for at least two hours. Rub the bitter gourd with your hands to remove the excessive bitterness. Wash the bitter gourd with plenty of water and squeeze to remove water.
2. Fry the onion slices in oil until the edges turn light brown in color. Remove the onions from the oil and keep aside.
3. Fry the bitter gourd pieces in the same oil until they turn golden brown. Remove from the oil and discard the oil.
3. Prepare the bhoona gosht. Add fried onions, bitter gourd to it. Cut the tomatoes into small pieces and add to the bitter gourd mixture. Mix well.
4. Cover the pot with lid and cook it over low heat until bitter gourd and onions become soft and tender. No need to put water but if it tends to stick to the bottom add 3 to 4 tbsp of water.
5. Add yogurt and cook for 4 to 5 minutes stirring all the time. When oil separate from the mixture take off from the heat.
6. Garnish it with coriander leaves.
*This recipe serves 6 people.
Preparation Time: 20 minutes.
Cooking Time: 35 minutes.

i don't like karaylay and moli..but since ammi knows about this habit of mine..she just mix them up..like today she made a roti of moli..and i ate it...and then later on she told me that it has moli in it..so accidently i do eat those ingredients at times..
the only moli i would even eat is from the pani ka achchar.. karaylay: karaylay ki daal, karaylay ki subzi and karaylay wala qeema are some of the dishes that my ammi makes.
