Absolutely finger licking, fool proof, simple and easy karhiee
Chicken 1kg (we use leg quarters, make 3 pieces of each leg qtr - 4-5 leg qtrs)
200gm Sliced Onion
600gm Sliced Tomatoes
1.5 tsp salt (or to taste)
1.5 tsp chili powder (or to taste)
2/3 tsp turmeric
Mix everything from above ingredients in a daighchee. DO NOT add water or oil. cover and cook on high heat for 15-20 min
Add and mix chicken. Cover and cook for 10 min on med-high heat
In a wok, heat 1/3 cup oil and transfer all the chicken in the wok. Fry for few minutes on high heat
put 1-1.25 cup of whipped yogurt, 150gms of fine cut ginger and cook on high heat for 2-3 min
put 3-4 whole green chilis, reduce heat, cover and cook for 5-10 min to till oil separates and chicken is done. Bring it to desired consistency buy evaporating or adding water. I like it with little sauce some people like it all dry.
sprinkle some garam masala and hara danya and serve!
There might be many versions out there but this version has onion but onion is not fried and when you cook it on high heat for 20 min with tomatoes, it will sort of dissolve.
I normally tune any recipe that I am following to get the desired texture.
So mine was much more bhuni bhuni si and I made it a bit differently…I cooked the sauce and chicken separately and then simmered them together at the end.
