^ exactly … the classic way of having dates is stuff at leat 5-6 of them at the same time in your mouth … and then get stuck for the next 15 minutes chewing them off ![]()

I stuffed some medjool dates with mascarpone cheese mixed with a touch of lemon juice and chopped almonds and pistachios. They were heaven.

Recently in a nikah ceremony I had the chance to taste most amazing dates. They had whole almonds in their centers instead of seeds and they were sprinkled with coconut flakes. Man they looked and tasted amazing. ![]()

TLK…maybe I am wrong but I believe that the majdool dates are quite soft and already pretty sticky…then when you cut them open and remove the pit some of the stickiness transfers to the outside…enought to make the coconut shreds stick.

Majdools are dry and non sticky from outside but yes you are right, when you cut them open, some of the meat oozes out and helps make outside sticky

My mom takes pitted dates...chops them up.....and adds them to the fruit chaat. It provides a fun texture to the fruit chaat.......you get the bite of crisp fruits......and then you get soft squishy date texture.
I find it interesting how people have their own unique way of making fruit chaat. Even among relatives/family....everyone has their own style. One of my khalas adds chanay (chick peas) and meethi red chutney to her fruit chaat. We do the dates, lol. And the cool thing is that dates contain iron....which is better absorbed by the body when taken in conjunction with vitamin C. So the fruit in the chaat contain vitamin C which help the iron from the dates to be absorbed better. It all works out :)

Cheese is a great idea. Never thought of it, but I think the taste would be excellent. How about baked brie with dates?

*** DATE CAKE***
Warm cooking oil in a pan and add the mashed dates and stir thoroughly to form a paste. Add sugar and coconut and cook for further 10-15 mins... Crush marie biscuits into crumb form.Add crushed biscuits to the date mixture and cook for 5 mins. Remove from fire and spread onto a greased plate/dish. Let it cool down.... Whip some fresh cream till it becomes thick. Pour over the date cake. Cut into squares... Garnish n serve!
(Didn't use any fresh cream on mine though.....)

Anyways, if you are doing the stuffing nuts in dates thing for your party, be sure to leave some plain for people who might be allergic to nuts, or check beforehand if anyone is

Ingredients:
1/2 kg dates, washed and deseeded
1/2 cup ghee
250 gm khoya
1/2 cup semolina (sooji)
1/2 cup sugar
50 gm almonds, chopped
50 gm pistachio, chopped
3 tbsp honey
2 tbsp kewra
Method:
Roughly chop dates in a chopper.
Heat ghee in a wok and add chopped dates in it. Cook it on low heat.
In other pan take 3tbsp ghee and add semolina in it. Cook on low heat till it changes it color into light golden. Stir continually otherwise it will burn.
Now add cooked semolina in dates. Add kewra, sugar and honey. Mix well by stirring continually.
When all things are well combined, add 1/2 cup of water.
Add chopped almonds and pistachios when the water dries out.
Add khoya and 1/2 cup of water and cook till halwa leaves the oil.
Garnish it with chopped nuts.
Serve hot or cold.
Tip: For good results always make halwas on low medium heat and stir it continuously.
