I made kebab ka masala, added yoghurt, fried onion, mint, cilantro and sookha masala.. and even added an egg…but when I add it to the pan it falls apart. What can I do to bind them so that they don’t fall apart ? Please help

I don't think you need yoghurt for these kababs. I'd mix them again with a few slices of bread or a potato boiled and mashed up.

agree with masi. my mom makes them and dusnt add it.. her kabab shrink too becus it has fat in them. u put all normal masalas in it n egg thaz all. no khada aur kuta masala or anything. although m aware ur kabab are breakin i dun think addin bread crumbs or bread pieces is a good idea.. with due respect to niki.... cus the taste will change and will not taste anythin like kacchay kabab is supposed to! BUT since uve already made the mistake of addin yogurt u have no choice but to, v reluctantly, add bread pieces :( next time try without yogurt, u wudnt need bread pieces or bread crumbs then!

I think bread should do the trick or sometimes I have even used bhuna huwa besan.

Exclude yogurt I don't it even goes in shami kebabs.
My mom also add little dried anar dana that gives a good taste. I have never seen her using bread slices or bread crumbs or potatoes for binding. Egg can serve as a binder.

another method (pretty unconventional) that comes to my mid is that if you fry the kababs inside cookie cutting (or hamburger making) metallic molds (Pattie makers) and once one side is cooked, only then remove the mold and flip.

add a bit of corn flour and no yogurt .
you only need corn flour is your keema is watery. the best thing to do is leave keema in a strainer so it would drain any access water in it.

isnt its same as CHAPPAL KABAB. I grind 2 onions with green chillies and add it into the qeema and all other masalas..nothing else and no yoghurt and it comes out fine. wen cooking dont change sides alot and we make weekly and it never breaks.
