KACHAY GHOST KI BIRYANI BY FARAH
Chicken 1kg or (2lbs)She took boneless but you can use mutton, beef, etc.
1kg rice (presoaked)
1 1/2 cup oil
4 Onions (fried to dark brown)
1 cup yogurt
1/2 cup milk (put few saffron strands in it)
8 Cloves of Garlic
2 Pieces of Ginger
1/2 Bunch of Dania (coriander)
1/2 Bunch of Podina (mint)
12 hari mirch (green chillies)
Salt as needed
1 cup khoya
1tbl black cumin seeds (roasted) & 2-3 choti elichi & crush together
2 lemons (squeeze & take juice)
1tsp cinamon pwd (dal chini powder)
1 cup crushed Almonds
2 Tbl Papaya paste
--1st step make Rice:
In some water add 3 choti elichi, 1Tbl sufaid zeera. 2-3 badi elichi, 2-3 Cinnamon stick
2tbl salt, 2-3 Laung & add rice & cook uncovered until rice is 2 Kani. (almost 8-10 minutes. Make sure rice is not fully cooked only at 2 kani)
--2nd step
Farah put the papaya paste on the chicken an 1hr ago. In a blender put hara dania, mint & hari mirch in a blender (put a little water if needed). When it comes in paste form put it on the chicken. Then add yogurt. At this stage you can also add papaya paste (if u already didn't do it) & mix in crushed almonds & kala zeera elichi powder. Then add your ginger garlic paste (in the recipe card it says garlic, ginger seperate, but Farah made them in to paste.. about 4 tsp) add 1/2 tsp of cinamon pwd, & 1tbl of salt. Mix all, & marinate for atleast 2 hrs for chicken. (if using mutton etc. increase time to minimum 3 hrs)
--3rd Step
1st layer add half the Ghost mix in your pan, & squeeze 1 lemon on it & layer 1/2 of the browned onions on it. & then half of the rice. then add chicken layer again, squeeze 1 lemon, then rice, THEN onions, then use about 1/2 cup of saffron milk,use your spoon to put it on slowly( Farah says becareful & do it slowly & use only how much you think you'll need) Then slowly sprinkle on your khoya (which was roughly crushed or in cubes) & Cover. Cook on low heat 35-40 minutes. Put a purani daychki or tawa under your pan. (heat purani daychki 5 min first
