Kabobs mixture in fridge

Hi. Can anyone tell me how long i can keep a keema kabob mixture (keema, onion, masala etc) - raw in the fridge for?
Also, same for aloo-chicken kabob mixture

I want to make a big batch if it, and then just make them fresh when needed. But need to know what are the time limits

My SIL keeps chicken marinade in the fridge for months, she said as long as its marinated, you’re fine … what !!! Is this true

My chicken aloo kabob mix would be cooked btw .. boiled both aloo and chicken with masala

How long can I keep meat in the refrigerator?
What would we do without our refrigerators! Can you freeze keema kabob patties?
If yes, would i need to know anything about defrosting/frying when the time comes? Or i can just directly put them in a pan to cook ?

What about aloo/chicken frozen patties?

If chicken is already boiled then there is no problem freezing them, With keema kebab if they are frozen just microwave them slightly, not completely thaw and then cook to a safe internal temperature. I normally like to cook the keema kebab before I freeze them, Ground beef and chicken both are very prone to salmonella which is hard to kill even at higher temperatures..

So i made a few chapli kabob yesterday before freezing them to check namak/masala etc.. they taste great, BUT came out a little too hard for my liking.. i like softer kabobs.. i thought adding egg was supposed to help with (which i did) and binding so the kabobs dont fall apart but i guess that didnt work against softness...
I initially fried on low heat to cook thoroughly, an dended with high heat to make it a little crispy..

I start with high heat then low, press them down to really thin, add lots of onions, green, onions and tomatoes. you can add a bit yogurt to make softer or a bit of meat tenderizer
