Kabli Pulao?

how to make the best kabli pulao? or some ppl call Qabuli…
I am talking about the afghani pulao with nuts, carrots and raisins…

I made some the other day using an old recipe from this site for inspiration, it turned out really nice, everyone loved it.

I shall check that recipe and see if i can paste the link.

Thats the recipe i used for inspiration, but i actually darkened the onions till they were very brown and the reduction was very thick. Also I added 1 black elaici, 2 green elaichis, cinnamon, cloves and kewra water cos i didnt have rosewater. Also i added agood few teaspoons of sugar to the carrots and a few knobs of butter to the finished dish.

But really if u want authentic, follow the real recipe above!

First soak chanay for whole night, next day boil them with a pich of baking soda. In another pot put 3 cups of water then add few(green cardamom, cinnamon, cloves, whole chilli, kali mirch,saunf, white cumin seeds, sabit dhanya) one onion, little bit garlic and ginger boil them till half, take extract out. Then put oil in a pot, fry one sliced onion till light brown, add ginger/garlic paste and 2 tbsp dahi bhoonify then add chilli powder up to taste, black cumin seed and salt and chanay then bhoonify masala then add extracted juice add water if desired, according to rice quantity then put on dum, after dum sprinkle brown sliced onion on top.
