Jamaican Ginger Cake

I am craving the ones I could buy at Tesco in London.
Can someone please post a recipe so that I can make some for myself???

Here is a simple recipe…funnily enough, from the Tesco website :hehe:

Ingredients
175 g butter
175 g soft brown sugar
175 g golden syrup
200 ml milk
2 eggs, whisked
325 g self-raising flour
2 tsp ground ginger
1½ tsp bicarbonate of soda

Method
Heat oven to Gas 2, 150°C, 300°F. Butter and line a 1kg (2lb) loaf tin with baking paper.

Melt butter, sugar and syrup in a pan on a low heat, mix so that the sugar has melted into the butter and syrup. remove from the heat, add the milk and blend until smooth, add the eggs and mix in. Finally fold in the flour, ginger and bicarbonate of soda, pour into the prepared loaf tin.

Bake for 1 hour, then cover with baking paper and bake for another 30 minutes. To check that the cake is cooked insert a knife into the middle and it should come out clean.

Remove cake from the oven and leave for 5 minutes, then turn out of the baking tin and cool. If possible, wrap cake in greaseproof paper and leave it in a tin to enrich for a week as it improves with age.

I'm gonna have ginger cake this weekend.....

just one thing....the cake I ate had some sort of icing (not really icing) on top....almost like a caramel top coat.....

Some people pour icing (simple icing sugar and water mixture) over the top.... but i know which caramel icing you're talking about. Here's a recipe for it, but i don't know if it's enough/too much for the cake recipe above:

60g butter
1/2 cup brown sugar
2 tablespoons milk
1 1/2 cups icing sugar
1 teaspoon vanilla extract

Combine butter and sugar in saucepan, stir constantly over heat without boiling until butter is melted and sugar is dissolved. Add milk, stir for a further 2 minutes over heat.

Transfer mixture to a small bowl, gradually beat in sifted icing sugar and extract. Don't worry if there are lumps after the first couple of additions, they go away as you add more icing sugar. You can add as much/as little icing as you want, depending on which consistency you want (runny or thick).

^ I know.....but I can't find it here.
This side of the pond is horrible for desserts anyway.......not much variety at all.
I am going to have hubby bring the cake when he returns. Maybe he should bring lots of cakes.....
