Re: It's BBQ time!!
Yea, can we get some good homemade marinates instead of the box stuff. Esp some red meat recipes.
One of my summer time favorites is mint lemon chicken.
4 chicken breast boneless and skinless
1 cup yogurt (plain)
3 tablespoons olive oil
3 cloves garlic minced
zest of 1 lemon
1/4 cup chopped fresh mint leaves
(Optional to add chopped fresh cilantro)
2 teaspoons cumin
1/2 teaspoon of cayenne pepper
1 1/2 teaspoons salt
Now mix all the ingredients together, than make sure all of the chicken is coated evenly. Marinate over night or for several hours. Before marinating the chicken I like to make diagonal cuts in it so marinates better.
Grill for about 25 minutes, you will have to turn it often to prevent it from burning.
I love summer grilled vegetables; cherry tomatoes, zucchini squash, bell peppers, onions etc. Slice them into bite size, coat with olive oil, salt and peppers, and grill on skewers.
With a glass of fresh lemonade, bliss.
