That is not true. If it is possible for us to know something without influencing it then the same applies for God of course.

If a teacher knows his students well then when they take an exam his estimate of their score will be quite close to what they get. Now God being Perfect will Estimate with 100% precision so the effect is knowledge without interference.

Somethings are indeed recorded and no matter what we do all our paths i.e. the array of choices we make will all go through those points but the path we take to get there is ours to take.

Say that a man is destined to die at 5pm on Monday in a given month in a given year, he may die there by being murdered or by accident, suicide or by whatever means, the thing written is his death.

Otherwise:
Have you seen the TV show FastForward? It describes the idea of quantum mechanics allowing two or more locations (universes) for an object to be true at the same time. Read about Schrodinger’s Cat. To us this is merely a paradox, but in reality and more appropriately to God this would be a way for us to understand the situation.

Part of the deeper works of Islamic theology unveil that for God past and future are immaterial and the same. Time is a binding for our temporal existence. Therefore you will not understand using your normal apparatus the harmony in the two conditions of freedom of choice and destiny.
