In Mughal Era....Bowing Dowing was symbol of respect....It was done for Kings...This is only a cultural thing and if Muslims can do it to Muslims then whats wrong in doing with Japanese.
If I was you I would say Assalam o Alaikum...and if chinese ask...chi chua cha....(what did you just say) just reply I said Peace be on you.
