In which order?

Hi, this may sound like a silly question , but i was wanted to know when the best time is to add spices when making curry, after the onions and garlic are fried i add tomatoes. Should i leave the tomatoes to simmer for a while in the onion mixture before i add spices? Or do you add spices after meat/chicken is added ?My friend adds spices at the end of the curry just before water is added, she says it doesnt lose flavour. Sorry if this sounds confusing

i add spices to the onions....then the tomatoes

With desi kana the masala has to taste good and flavor well evolved befor you add the meat/vegy.

oh one more thing..went to an american cooking class and she noted that by adding liquids and difft stages, helps pull out more flavor.........so adding tomatoes...letting it stew...adding water...letting it cook then the meat.

Usually its fry the onions, add garlic and ginger, fry, add spices fry for just a bit and then add the tomatoes or meat to stop them from burning. OR after frying the onions and stuff add the tomatoes and cook em till the oil seperates and then add the spices and cook them a while.

Also, can any1 tell me how you get a really smooth consistency when making a shorva salan. How do you get the onions to dissolve? Does any1 blend the mixture?

Whatever you do, add salt at the very end when the dish is almost ready.

when spices are added to pan, how long are you supposed to stir them? Is it a matter of minutes, or seconds, before you add the next ingredient, ie. tomatoes, meat etc? Do you add any water to spices otherwise they would burn?Could any1 give me a rough indication of how long to fry spices please.
