Many of us have been cooking for years and make good food Alhumdullillah. Yet , it remains a fact that one is always learning in the food world. What tips / tricks can you share that you have applied recently to further improve your cooking skills?

I will share my trick.
you know when you are at the onion bhunoo stage in the very beginning. I started adding half tsp of methi seeds and that gave a beautiful aroma to the food .
Occasionally I change the spice I use , at that particular stage. For example, some days I use cardamom. Other days I use cinamon or Saunf or zeera ..
This really adds the kick to the food ..

Another thing I have started doing recently , I blend tomatoes in the blender before adding them to the salan. So while blending I add one green chilli .. that really makes alot of difference to the over all taste and aroma of the salan

My problem is that while majority of everything comes out well and tastes good (mA), the taste is just never consistent…it’ll be good but not hte same as last time.. And it’s usually because I do everything andaza se and forget what I did when it came out right. ![]()

Sara, I have the same problem too with certain dishes .. I did sort of managed to control the issue by keeping a measuring spoon in the spice cabinet. I use that single spoon for all the spices and it sort of helps me to not deviate a million miles. know what i mean?
Even the while spices, I take them out in that spoon and then add them to the dish .It helps

When onion starts getting little golden i add Ginger Garlic paste and the smell is lovely. I also add bay leaves/curry leaves and little whole spices when im making like Allo Gosht, Simple chicken and qeema sometimes, Adds to taste no doubt.
In simple chicken and gosht adding ginger and coriander leaves at end and leaving it for 57 mins give it an irresistible aroma
