Iftari Ideas & Recipes

My mother is Arab, she makes Shourba a lot during Ramadan.

1/2 kg meat
3 tomatoes (puree)
2 tablespoons tomato paste
1 onion (finely chopped)
3 tablespoons quaker oats
1/2 tsp garlic paste
salt
1 bay leaf
black pepper

Saute the onions in oil, add the garlic paste and fry the meat well. Add about 3 cups water and the bay leaf, salt, black pepper, tomato puree and paste and cook till the meat is tender. Add the oats and cook till they're done... serve with lemons!

^ Thanks Gina.

Ira, we have our recipe!

Re: Iftari Ideas & Recipes

Thanks Gina, you are awesome. I bet vegetables would taste good in this shourba too.

Gina , would you be a doll and ask your ammi on how to make hareesa and umme-ali too? :D I will be soooo grateful!

Sure!

Um-alli:

filo pastry 4-5 sheets
heavy cream
1 cup sugar
4-5 drops rosewater (optional)
lots of pistachio's and almonds

Bake the filo pastry in a flat tray (brush it with clarified butter or butter) and bake till it fluff's-up. Boil the heavy cream along with the rosewater and sugar. In a tray cut-up 1-2 inche squares of the pastry and line the bottom of the deep-dish tray and pour over the cream mixture. Sprinkle with lots of nuts.. it's usually eaten warm.
