Yes, huge quantities of sugar, however they make a concentrate (which keep for ages), which you top up with water. You’d only use a small amount of the concentrate (or to taste), so you won’t be consuming too much sugar.

CB i have maida at home but dont know if its all-purpose flour or self-raising flour, whats the difference?

Chicken 65!!!

I'm sending you the basic recipe for 1 tray of chicken (1 1/2 lbs, more or less)

Boneless leg & thigh meat, cut in small pieces (it's better than using breast meat, stays moist and is more flavorful! get your meat guy to cut it up for you!)
Chicken 65 masala (any powdered brand will do)
Shan Tandoori Chicken Masala
1 egg
Plain Yogurt- 1 tablespoon
Kaddi Patta (curry leaves) 4-5
Podina (mint leaves) 4-5
Green Chillis (split in half lengthwise) 2
liquid red food coloring

STEP 1:

Start with the chicken, add enough of the chicken 65 masala to coat it all really well, along with some ginger/garlic paste and one egg...mix well (don't be afraid to get your hands into it, lol!) and set it back into the fridge to marinate for about an hour. When you're ready, start by shallow frying the marinated chicken pieces (you should only have about 2-3 inches of oil in your karhai/fry pan) you don't have to worry about over frying or the dark meat being totally cooked through, because the chicken will be returned back to cook again in step 2. Continue shallow frying the chicken in batches and on paper towels as you take it out. Once you have all your chicken fried, let your pan cool down a little and drain off all but 2-3 tablespoons of oil that you were frying in. This is where you need to act fast, so have all your ingredients laid out and within reach....

STEP 2:

In the remaining oil, add the karri patta leaves and green chiilis, and give it a stir...now add about 1 heaping tablespoon of yogurt and some Shan Tandoori Masala (I never measure, I just go by taste, so make it as spicy as you'd like!) and stir it around again so that the yogurt and masala cook slightly, just for a few seconds....Now add the reserved chicken and mix it really well..this should not be a liquidy, curry type dish! You just want the yogurt, masala, and karri patta to mix well with the chicken and permeate throughout the dish! At this stage is where I like to add a few drops of the liquid red food color. Add the chopped podina, cover and let it bhoonify on medium heat for a few minutes..and Enjoy!!!

Daffy, sorry I just saw your post ... Maida is just plain all purpose flour .... it doesnt have baking powder or any raising agents added to it ...

Selfraising flour has already got baking powder ( raising agents ) in it ...

you can use either of them, just that when you are using plain flour , add half a tsp of baking powder as well .. and when you are using selfraising flour dont add the baking powder ... and if you have no clue what maida you have at home, then no worries, just add half a tsp of baking powder to make sure the pakora's turn out fluffy ..

Easy Peesy Spring Rolls:

2 lbs boneless chicken
2 bags (small) coleslaw
salt & pepper to taste
white pepper 1/2 tsp
chilli garlic sauce (few tsps) i usually just throw some in for the flavor
white vinegar - about 2 tbsp
soya sauce - 2 tbsp or as per requirement
oil for stirfrying the mix -

Boil the chicken in water with vinegar in it - I do this to omit the GG paste because it tastes much better
Using a food processor, shred up the chicken (I usually put all of the chicken in once and pulse it lightly, less mehnat)
Take a wok and throw in a few tsps of oil and then throw in the chicken, saute for a few minutes and then add both bags of the coleslaw -
stir-fry the mix lightly keeping it on the crispier side
add all the spices and mix well, adding the soya sauce and chilli garlic sauce aswell
keep stir-frying and then cover the wok for about 5-7 minutes.

check the namak/mirch etc

get your spring roll sheets ready,
prepare a paste (watery) with maida and water to aid in the pasting of the spring roll sheets.
add a big tbsp of the mix to the sheet, roll up and secure with the paste -

I usually make about 40 of these using the mix easily!!

WATERMELON-STRAWBERRY SLUSH

INGREDIENTS:

1 cup hulled fresh strawberries
1 1/2 cups cubed, seeded watermelon
3 tablespoons sugar
3 tablespoons fresh lemon juice
1 cup ice cubes

METHOD:

Place all ingredients in a blender, and process until smooth.

Aloo and keema cutlets.

recipe :

  1. minced meat / keema - 200 gms ( about 1/2 cup)
  2. potatoes boiled and mashed - 2 big ones
  3. ginger -garlic paste - 1/2 tspn
  4. small onion finely chopped -1
  5. green chillies finely chopped -1
  6. turmeric powder - little
  7. red chilli powder - little
  8. salt to taste , green corainder few springs.
  9. egg white -1
  10. bread crumbs.

method :
Boil and mash potatoes , add little turmeric , red chilli powder and salt to the potatoes. heat oil in a pan , add the onions and saute till brown , now add the meat and fry for 2 mins. to this add the ginger -garlic paste and fry again. now add chilli and turmeric powder and salt as per ur taste. close the pan for few minutes and sprinkle little water if needed. when the keema is cooked add the green chillies and the corainder leaves. remove from heat and cool.

to make the cutlets - take a small ball of potato mixture in ur hand and make it flat on ur palm now place one tspn of meat mixture on it and close the potato mixture and flatten it to make a cutlet. dip it in egg white and roll over the bread crumbs and shallow fry them in hot oil.

serve hot with green chutney.

chutnee kabab

boiled mashed potatoes (3-4)
salt to taste

boiled and mashed some pitatoes just like u make kababs and add little salt. u need to add more later

For chutne:
hara dhanya 1/2 bunch,podina 1 bunch 1tsp zeera,salt to taste,imli ka pani or lemin juice ( depends how khatta u want) lassun 1-2 pcs add little water and make a chutne it should be moti moti chutni not runy ...

now take some mashed potatoes in ur palm make like a bowl shape slight deep from the middle fill the chitni and close all the sides and shape like a kabab .. make all kababs like this dip in egg and bread crumbs then shallow fry ~tadaa~

Batter Fried Chicken Nuggets

  • Boneless chicken (large bite size pieces) 400 gm
  • Egg 1
  • Salt 1/2 tsp
  • Black pepper 1/2 tsp
  • Milk 1/4 cup
  • Lemon juice 1 tbsp
  • Oil as needed for frying
  • For Batter:
  • Plain flour 3 tbsp
  • Corn flour 3tbsp
  • Baking powder 1 tsp
  • Water 1/2 cup
  • Salt 1/2 tsp
  • Black pepper 1/2 tsp
  1. Marinate chicken in salt, black pepper, egg, milk and lemon juice for 10 minutes.
  2. For Batter: Mix plain flour, corn flour, baking powder, black pepper and salt to make a thick paste with the help of water.
  3. Now heat oil, dip chicken pieces in batter and fry till crispy golden brown .
  4. Serve hot with ketchup and french fries.
