*Chicken Pakora
*
1/2 kg chicken
1 teaspoon of white zeera
2 table spoon of rice flour
4 table spoon of besan
1 teaspoon of mastard paste
2 table spoon of lemon juice
1/2 teaspoon of chat masala
1/2 teaspoon of ajwain
marinate it for half an hour
and then fry pakora

Pinky, you love chicken a lot don't you?:) I like chicken because it's a very versatile meat and you can experiment a lot with it. So many things you can do with it, plus it cooks really quick too.
In your chicken chaat recipe, I guess one can add boiled chickpeas too. Plus any other veggies. I like to add veggies to the chaat.

tried bengan ke pakore not so long ago, yummm will def. make them for iftar a couple of times. The iftar will be so late this year, so we probably will just have regular dinner, and then fruit chaat. No pakoras/chaats very regularly :(

EXACTLY! this is what we have decided in our household as well. we'll just break fast with khajoor and then after namaaz e maGhrib straight to dinnner :) i LOVE baigan stip pakoRaas. :)

*
2 tbl spn finelly chopped ginger
4 tbl spn gram flour(besan)
1/4 tea spn chilli powder
Oil
Salt
**Method:
**Mix together flour, ginger, chilli powder, salt. Add a little water and make a thick batter.
Heat oil. Take a small amount of batter and slowly slide in the oil. Fry till done.

That just what we are going to be doing too....no roza is complete without fruit chaat.Maybe at the weekends we will have iftari...hope my stomach can cope will all these late night meals,as we usually eat early evening.

Mini bun kababs:
2 boiled, peeled and mashed potato's.
1 onion finely chopped
2 green chilli's finely chopped
1/2 cup of fresh dhania
salt according to taste
1/2 tsp red chilli powder
1/2 tsp zeera powder.
1 egg lightly beaten
Mix everything really well and form into small patties, dip in the beaten egg and fry. Butter the mini buns and toast them on a 'tava' over medium heat and set aside. Top it off with imli chutney, green chutney, onion rings.

Chicken Cheese Balls.
Quantities are hasb-e-zaika:
Chicken boiled and shredded.
salt
black pepper
Butter
Soya sauce - a little
Chedder Cheese
Bread slices
Egg
cabbage, green onions or capsicum (optional)
Procedure:
Boil chicken, shred it, add butter (a little, just for the taste), salt, black pepper and a little soya sauce. Mix well. You can cabbage, green onions or capsicum too if you want, make sure they are finely chopped.
Now take a slice of bread, cut the corners, and tap a little water on the slice with your hands (just a little so that it doesnt get over wet as it will break). Now put the chicken mixture in the middle of the slice, a small piece of cheddar cheese (or mozzarella, i prefer cheddar) and give slice shape of a ball (size of a kofta) with your hands, making sure that the mixture is safely inside. Dip in egg an fry....I love it and make itg every other day during ramadan.

**Crispy fried Chicken
**Ingredients
1 Chicken (with skin)
4 Eggs
Oil for frying
Salt as required
For marination
1 cup Vinegar
1 tbsp Red chili powder
2 cups special broast masala
Salt as required
Directions
In a mixing bowl mix together the vinegar, red chili powder and salt. Cut the chicken carefully and marinate it with the above mixture for half an hour.
In a separate bowl beat the eggs. Dip the chicken pieces into the beaten egg sprinkle broast masala and deep fry.

1/2 cup Corn flour
4 tbsp Chicken powder
2 tbsp Garlic powder
4 tbsp White pepper powder
2 tbsp Chinese salt
2 tbsp Salt
Directions
Sieve the all purpose flour, rice flour, and corn flour.Blend together the all purpose flour, rice flour, corn flour, chicken powder, garlic powder, white pepper powder, Chinese salt and salt.Store the masala in an airtight bottle.

1 cup plain flour
1 finely sliced onion
1 finely sliced green chili
2 eggs
¼ bunch finely sliced coriander
1 tsp ginger garlic paste
½ tsp sugar
¼ tsp turmeric powder
½ tsp red chili powder
3 tbsp oil
Salt n black pepper to taste
Method
Add 1 cup plain flour, 1 finely sliced onion, 1 finely sliced green chili, 2 eggs, ¼ bunch finely sliced coriander, 1 tsp ginger garlic paste, ½ tsp sugar, ¼ tsp turmeric powder, ½ tsp red chili powder, 1 tbsp oil and salt n black pepper to taste and water as required to a bowl and mix well.
Grease a frying pan with some oil so that it does not stick. Roll a portion of the prepared batter with a rolling pin. Fry it for a couple of minutes on low flame.

ROASTED LEMON POTATOES.
Wash and slices potatoes and boil them
after drying add lemon juice, red chilli, garlic paste, salt, oregano and olive oil, mix them well.
bake potatoes for 15 mins.
Garnish with parsley.

Why I'm reading this when I have a roza is beyond me lol but I thought I'd share a really simple dessert recipe, it doesn't have a name so we called it 'creamy biscuits'. It's a great dessert to make when you're short on time. Every single guest we've served it to has loved it and left with the recipe lol
Ingredients:
1 can of condensed milk
2 small cans of extra thick cream
1 cup of double cream
Rich tea biscuits
Boil the can of condensed milk in a pan of water for 1 hour. Leave the can to cool in cold water for 20 minutes. Using a whisk, mix the condensed milk, extra thick cream and double cream together. Layer the biscuits in a bowl and pour the mixture over it, approx 15 biscuits. Decorate with chocolate shavings and walnuts or fruit. Best served cold.
