Iftar for 50-60 people?

My husband and I volunteered to make iftar for masjid for 50-60 people.. the menu has to include:

Rice
Meat/Chicken
Vegetable
Salad
Dessert

I need ideas and approximate amount of the ingredients like how many cups of rice for 50 people?

I am planning to make matar palao.. how many packets of peas will I need?

Chicken.. how much?

What can I make in vegetable section? channa? mixed vegetable? Aloo matar? I dunno.. please help!

For dessert I am planning the no cooking required dessert rceipe by Chips6.. what do you say?

I think my mom makes around 7 cups of rice for 50 people and she adds 1.5 to 2 medium sized bags of peas in them. I think she doesn't put more then 5-6 glass of rice in 1 big tray.

She always gets thighs and legs for the salan, and her count is app. 2 pices of chicken for everyone. If the thighs are too big, she get them cut in half. Salad I say a small tray, if people really like salad then make a big one. Dessert, I would say cut some cantaloupe and watermelon. That is what my mom did.

for vegetables, just make mix vegetable. It is easy.

Lusi is right about the rice and chicken....
For a vegetarian dish you can do channay or aalo chanay...its a nice dish and easy too...
Either do fresh fruits for dessert or maybe a store bought sheet cake....
since you are cooking for a lot of people,maybe you would want to keep it easy.
