Ideas please

I’m inviting my friends over for lunch/dinner/whatever soon. One of em is a strict vegan (she’s sikh) so no fish or eggs (dairy si okay), the rest of em aren’t vegetarians..but i still want to serve something..u know..guest-worthy.. bring on the ideas all :slight_smile:

OK here goes.

  1. Bagharey (pyaz, zeera, garm masala) chawal
  2. Raita, salad
  3. Chicken qeema kofta salan or your famous butter chicken
  4. Masala bhindi or palak paneer
  5. Dal makhani
  6. Chikkar Choley
  7. Mutton karahi

That's a lot and a good variety that everyone will have enough of :D

any type of vegetarian pasta, vegetable egg rolls, cholay, bean salad.

If you want a desi options -
you can do aloo zeera, choolay, halwa and puri (garam garam)

if your guests can handle non-typical desi, you can do full chicken roasts with veggies, beef skewers, meatloaf is yummyyyyyyyyyyyyyyy.

hmm okay.

if i fry a few things, I reckon i’d have to change the oil (after thoroughly washing the fryer of course) since I fry meat stuffs too. Erm, how do i get rid of the oiL? (or is that ntoher thread? :hmmm: )

You cool it in a separate container, then throw it down the drain. Then pour some baking soda and hot hot water down the drain right after.

Sara, for the vegans , you could actually do some vegetable tikkas on skewers ... they get done fairly quickly and taste delicious ....

for the non-veg you could have similar chicken tikkas maybe ... they are freaking easy to make ...

hmm make paneer tikka...most vege ppl luv that..
and at the same time u can make chicken boneless tikka with that marinade...

Vegetarian dishes:

Paneer tikka masala (like chicken tikka masala but with paneer cubes)

Palak (palak with aaloo or paalak with paneer)

Malai kofta (potato vegetable balls in creamy gravy)

Baingan (eggplant)

Mixed vegetable medley (cook mixed vegetable with desi masalas) or do a veggie stir-fry

Sikhs love mattar-aloo, bhindi, and gobi is one of their top faves. Paneer is much loved and they make it in pretty much every way (stir fry style with bell peppers and aloo, with mattar, in a gravy form, with palak, etc).
You could make bagharey baingan too. Veg cutlets. Make two batches, one with keema inside, and one without, for both veg and non veg options. You can use corn starch with water for binding instead of eggs.

both are super easy to make (same recipe actually), and taste delicious!

also, stuffed tomatoes!
get some fairly firm, but not underripe, large tomatoes. chop off their heads. run a sharp knife around the inside rim to loosen the inside bits. scoop out the inside bits with a spoon so the toms are all nice and hollow.
fill with pre-cooked qeema. sprinkle parmesan cheese generously over the top and drizzle with olive oil.
bake in a 375 degree oven for about 20 minutes or until the cheese is all nice and golden-brown on the top. voila! they're absolutely delicious, and you could fill them with a finely-chopped vegetable sabzi for your Sikh friend.
i like to serve this with mashed potatoes.

Why dont you make vegetable biryani for the vegans? I make white channa and potato biryani for my friends when they come over .. and they just totally love it ... and it takes no more then 25 minutes to get the biryani done ...

One of my sikh friends makes the best Dhaal makhani... i'll see if i can get a recipe up here..

bhindi??.. baingan with aloo? some sort of mixed veggie rice?? Palak paneer...??

For desi vegetarian go with daal and vegetable jalfrezi. You could add a meat dish like chicken karahi or kababs or both for the meat eaters and some boiled rice.

For american- pizza.. lasagna, potato pancakes, spinach pie or souffle... and the non-veg eaters will eat it up too!

For vegans, you can make karhi too....that's always yummy.

And as others have suggested: Aloo palak ya palak paneer, channa pulao. Daal makhani etc..
