I think im ok with the potatoes but what do I do with the chicken?
Simple techniques please and yes I like it to have some flavour and spice but skin off - possibly tandoori style like u have in weddings but not too much masalaa.
If you have access to tandoori masala, great. If not, then use the following as a masala. Its not very spicy but very flavorful.
Salt, Red Chilli Powder, Black pepper (crushed), dried coriander(ground). All of these spices should be ground/crushed and use quantities according to your taste. Ofcourse coriander, you just need a little bit.
Now, marinate your chicken in yogurt and the tandoori masala/our masala for a few hours. Preheat your oven to 350 degrees. Take a baking tray and line it with foil. I like to grease my foil so the veggies dont stick, just in case. Now place your chicken inthe middle of the foil. Add sliced potatoes, carrots, green pepper or whatever vegetables you like. (I like all three of them! :D ). Bunch up the foil like a little packet and bake. Depending on the type of meat you have, if its not a lot, it should not take more than an hour, or hour and half. Also, if you are afraid, your veggies will become too tender, then add them to the chicken half way through. But the real flavor comes from them cooking in the chicken stock.

wow Ira baji - it all turn out yummy!! Cooked it earlier today - Thanks again.
Had one major problem - I put a glass Pyrex dish on the hob on low flame - it had oil in it and I was going to put the potatos in it to roast.
The damn dish exploded - I swear - I exploded to little pieces, the biggest part hitting me in the stomach - very lucky I wasnt injured. as I was inches away.
Was scary so I had to eat extra chicken to get me over it!
