I need to know before tomorrow

I made some chinese style pasta today which was yummy…
But I forgot to put the rest of the chicken breasts back in the freezer, so they are completely defrosted. I have kept them in the fridge now(because I have heard that its not good to refreeze the meat), and will have to make something out of them till tomorrow. warna they’ll end up in the trashcan :disgust:

Any ideas?

chicken nuggets? boil and shred and use in a chicken salad, chicken sandwiches, marinate them in some tikka masala and roast them, chop them up and cook them in some vege stir fry type of thingie.

sadaf....if you don't feel like cooking a particular dish at the moment ...simply boil it, shred it n freeze in portions....it'll come in handy for making sandwiches(mix in mayo) or add in pasta or may be chinese rice /soup etc.

yup, i wanna gonna suggest what Afia said..
chop it, boil it, and freeze it - that way all you gotta do next time is defrost it and put in whatever your making :)

Boiling and freezing seems a good idea. I didnt want to eat chicken today anyway.

Hey there's nothing wrong with sticking it right back in the freezer. I've done it and never did I got sick, nor did the chicken tasted any different. Easy thing to do. Boil it. Plus 1 hard boiled egg. Make this sandwitch--> Slightly toasted 3 slices of bread. Spread marge/butter on two slices, layer it with letuce, put shredded chicken on top. Take another slice of toast, spread Mayo on both sides, and on top of that toast slice the hard boil egg, layer away. Top it off with the 2nd buttered/marge toast. Cut the sandwitch, enjoy with a glass of cool orange juice or coke ;) I just did that now as a midnight snack. Yum!

Orrr Stick it back in the freezer :)

This is what I finally did to the chicken breasts. Chicken Cutlets

While I was boiling the chicken to put in the freezer an idea popped in my head and voila…

Here’s the recipe.

2 chicken breasts
3 medium sized potatos, mashed
3 hard boiled eggs, mashed
salt and pepper (to taste)
1 tsp ajinomoto

finely chop the chicken breasts in the food processer. Add in potatos, eggs, salt pepper and chinese salt. ( I added 2 tbsp butter as well, to keep it moist a bit)
Make cutlets, dip in egg and then breadcrumbs.
Shallow fry and enjoy :slight_smile:

PS: I did extra effort to fill the cutlets with corn and cheese, which isnt visible in the picture.

PS2: these can be frozen :clown:
