whipped yogurt with a bit of milk to thin it out to desired consistency

add:
lal mirch to taste
salt to taste
finely chopped cucumber
finely chopped tomatoes
finely chopped onions

mix well. serve with qeema, qubooli and timatar ki chutney.

My mom adds red onions, tomoatoes, boondi, and sometimes potatoes. with coriander and salt/pepper/lal mirch to taste. I know that's nto really raita...but that's what they called it when I was young and it's stuck to me ever since.

1 Onion(medium sized)
1 Tomato
Roasted Peanuts powder (to taste)
Green Chillies (to taste) 1 cup Yogurt
1 tsp Mustard seeds
1 tsp Zeera
Vegetable oil
Salt (to taste)
Fresh coriander chopped finely for garnish

Chop onion, green chillies and tomato finely. Beat yogurt and add onion, tomato, green chillies, peanut powder and salt. In a small karhai heat oil and add mustard seeds and zeera and let them crackle and turn off the stove as soon as they start crackling. Then add hing to it and let it cool. Pour over the raita and garnish with coriander.

I love the one where you char the eggplant and then peel it and cut it up and add it to dahi. I thnk you add onions to it too and salt/pepper. Does anyone know if anything else goes into it?

femme....i like that one too...
if u saute some onion in some oil along with whole cumin and add that to the baingan raita,as a tarka/baghar...it gives it even more taste...and tastes great...!

ingredients
whole fat yogurt - 1.5 cup
1/2 water
1 tbsp oil to roast cumin seeds
roasted cumin seeds - 1 tsp
iodized salt - 1/2 tsp
1/4 tsp red chili powder
1/4 tsp black pepper
finely chopped coriander leaves - 6 stems
boiled and cubed potatoes - 3 medium
chopped tomato - 1 medium

method
in a fry pan, heat up oil and roast cumin seeds, till they are lightly browned and give aroma. take off from the stove.
blend water and yogurt in a mixer. add and mix in salt, black pepper and chili powder. blend again.
in a deep dip or gravy dish, place boiled and cubed potatoes and chopped tomato. add in coriander. pour in the yogurt for raita.
finally, add in roasted cumin seeds.
chill raita until ready to seve with rest of the meal. :>

for a simple, not remotely fancy, recipe that takes a couple minutes and no effort, just take cucumber and use a...i forget what they're called but they are like shredding boards that you rub the cucumber against and it shreds the cucumber, add that to the plain yogurt, add salt and laal mirch to taste...trust me it tastes yummy! :)

You can also add "Kala namak" or Rock salt in Raita. It's considered a **cooling **spice and is mined from the Himalayan mountains in India and Pakistan.

In ancient Tib-e-Yunani (Hikmat), later known as Ayurvedic Medicine in India, black salt has been used as a digestive aid, It's also believed to relieve heartburn and gas. It contains plenty of trace minerals other than just sodium chloride in regular salt. Besides the trac eminerals, it's also rich in Iron and other sulphurous compounds.
Story short, a heavy spicy meal can be coupled with a cooling salad or raita sprinkled with black salt to enhance digestion and to relieve intestinal gas, bloating, heartburn, indigestion, etc.

Simpliest recipe is just add ground zeera and salt. That's the yummiest, I think.

Use spices acc to taste..yummy sweet and chillie raita.

Mostar, yeh thats the one I know of. My aunt made it and its yummy. You take ground zeera, some salt, and one crushed piece of garlic and add it to yogurt and stir. Voila!
