last time when i went to pak..i hardly eat at any dawats because most of the salans were like floating with onions.. what i will do is just get the boti and eat roti with that..lol
CB..Let me know the little trick also because i also hate onions.
I just could not get the onions to dissolve in my foods…so what I do now is caramalize them on a slow heat.It takes a tad longer,but by the time I add the spices the onions are more or less mushy anyways.
There’s no way I can cook with sliced onions
…I always have to dice them.Go figure.

i have never seen that , and floating onion ??? thats a revelation
i think people who cook like that need to finely chop onions and really bhoon the masala on high heat to blend in onion and tomatoes....
visible onion can put anybody off their food .. although i dont mind onions..

make paste of onions then use them

what i do is put the onions, ginger, garlic, spices in...stir it all for about 5 mins then take a blender put the whole mixture in it, and blend those scary onions to mush!
This way you get a smooth, onion free salaan which tastes and looks great :)
Princess , the tricks are many :
1- you know when you are just about to start frying the onions , add one teaspoon of salt in it as well … and then lower the heat and cover the pot .. let it cook for a good 20 minutes , keep stirring … and then bring it on high flame and start browning the onions , and keep adding a splash of water every few seconds … it helps the onions to soften up quicker and ultimately blend into the rest of the masala .
2- The way one cuts their onions really makes a difference as well .. I dont use sliced onions , I either chop them really fine … or I give it a run in the chopper ..so they come out looking coarse and not a paste …
Guys , I feel turning onions inta paste totally changes the salan’s taste ..
.. so i dont turn them into paste at all … its helped me alot , and brings so much better taste in the salan when onions are nicely blended in.

I just keep bhooning until the onions become part of the masala...I slice them long but CB's method of chopping them fine sounds good too...much faster.

Reha it took me like two years to master the chef’s art of chopping with the BIGGG knife …
… a few times I almost chopped off my fingers :o…
Just out of interest , how long does it take you to bhuno the long sliced onions until they blend? and on what flame ( very low, medium, high ) ![]()
