how are hyderabadi khanay any different? please post some hyderbadi recipes and don’t just say hyderabadi bryani, how is that any different from regular bryani?

I dont think there is much of a difference between the hyderabadi food and typical Pakistani food except for a few dishes. Sindhi biryani is one that I know of. The difference is it is 'layered' with boiled rice and the biryani masala.

Hyderabadi Biryani is different in that 1) you don't make a seperate salan of the meat...its marinated and then put down at the very bottom of the pot raw and the parboiled ricr laid over it, then sealed tightly and cooked very very slowly, hence the name "kachay gosht ki biryani" 2) no tamatar 3) it's hard to describe but the end result is less "masala-y" and more mild I guess...it's honestly the only way I like Biryani as it's what I've grown up eating exclusively

I have a thread here by the name of Khatti's Kitchen Korner...do a search. I've shared some of my recipes for the well known Hyderabadi dishes like khatti daal, tamatar ki chutney, tamatar ka kat, talahuwa gosht, bhagaaray baingan etc.

hyderabadi dishes are different in a way that they use khatai in almost every dish.

Its the combination of masalay and the method of cooking that is very different.

Hydro food is really really good…and I am not even hyderabadi!

I think the cooking method is different.

For the biryani…the difference I believe is that KHI biryani has more masala…hydro biryani has more flavor…flavor of the meat itself. Its damn good with some dahi ki chutney.

I think this calls for a visit to Hyderabad House on Devon. :yummy:

( reposting ) Hyderabadi biryani is a miracle of a dish. You put raw meat, which takes a long time to cook, with rice ( half-cooked, no less), which cooks quickly in the same pot. And yet you end up with a dish where both meat and rice are perfectly cooked. Its simply awesome!!

My favorite part of biryani is the pockets of masala. I am not big on the meat, so I go looking for those lumps of masala. Based on that I lean more toward sindhi biryani. I did once have hydro biryani made by a hydro coworker and it was good but I didn't enjoy the restaurant versions of it (in dubai) as much.

I am hyderabadi so i've had wayyyyyyyy too much hyderabadi biryani. I find it more tasteful when they put more masala vs putting less masala leaving the rice dry. Its like you are eating hyderabadi biryani ki smell walay chawal without real masala. I like rich, full of masala hyderabadi biryani. Put more yogurt, put more onions, more masala.... Yum

My khaloo is a renowned kachay gosht ki biryani master lol. He does catering for family and friends and his biryani is legendary. It’s neither masala-y nor dry, just simply divine. I agree with OYMWYA…Hyderabadi biryani is a true enigma lol.
