**Ingredients **

2 kg Halal Beef, one piece
2 teaspoon kulmi shora (saltpetre)
3 teaspoon black pepper
2 tablespoons uniodized salt
2 teaspoon sugar, brown
4 - cardamoms, black (bari Iliachi)
2 inch piece cinnamon stick
3 tablespoons lemon juice

** Method **

Wash the meat thoroughly and dry with kitchen towel. Ground all the spices. Add ground spices in the lemon juice to make paste. Rub the paste thoroughly on the meat. Place it in a glass or stainless steel container and cover it.

Place the bowl in the fridge for one day. Next day get the meat out of fridge and rub (sort of massage) the meat to absorb the paste, it is important that at least half an hour is spent in rubbing the meat. Once again put the meat loaf back in the fridge. Repeat the same process each day for four days.

On fifth day remove the meat loaf from the fridge and tie it with a strong string. Place the meat in a large pot, add 2 cups water and Cook it over low heat for 2 to 3 hours or until the water is absorbed.

**This recipe serves: ** 6 people.
**Preparation Time: ** 15 minutes.
**Cooking Time: ** 45 minutes.

Too much work, too little reward.

I would rather eat beef jerky.

go to gahreeb nawaz and get hunter beef from there. instead of this 4-5 din ki utthak baithaak, u have instant gratification (excluding drive time)

fraudz..is gareeb nawaz food really good??its so close to ma house but i havent even tried it once..wat abt that hema's kitchen..have u tried that..they keep talking abt it on local channels

Hema's kitchen was (and may be is) being run by a Bangladeshi lady. I had also read some rave reviews in the Trib. I once tried her karraahi gosht and bhindi dau piaza. It was allright. Nothing so special. The review must have been written by some gora.

ghareeb nawaz is basically a dhabba as you know, their kebab rolls are pretty good and their hunter beef is good as well, actually I dont know of any other place that makes hunter beef on devon.

other than that, quality wise it is okay, nothing to write home about but its okay.

never tried Hema's kicthen, and dont believe in local reviews..
read one by some dude who tried nehari at sabri and noted that the meat was a bit stringy...abay oye..that is how the meat is supposed to be..punk. :)

i think i'll try their kabab rolls sumday ..the only thing that ive eaten from gareeb nawaz is their nan.

maybe ure right abt hema..i think they dont have much spicy food thats why its full of goras and chuptaas all the time.

waise..do u really like sbari's naheari..i think they r just overrated.

kababish is okay. food quality is decent but the service is kinda so-so
they were better when they first opened, now the have slipped a bit.

They do not compare well to the kababish In London.

Sabri is over rated, but not by much. If nothing else, the quality/quantity/service is more consistent than the other places.
although they enevr have chicken biryani on weekends..never

For all of the ^

Soak in buttermilk overnight....

For Duck or Goose....

Put in pot...

Bring to boil to rid of possible toxins..

Dry throughly.

Salt and Pepper..

Then

Bake in the oven topped with Cream of Mushroom Soup..if cut into parts...

You can stuff... and bake whole ...if large enough...

Then just rub a bit of olive oil ...and herbs... sage, tyme, rosemary.

Try some Angel Hair Pasta with garlic-butter sauce on the side.

Delious meal.

Deer meat

Have it ground by the butcher..

...good for making tomato-meat sauces....

Sloppy Joes....Spaghetti...etc....

Same with Elk....

The best tenderloin of the deer or elk..should be soaked...and then baked or broiled..

or treated as if cooking steak...depending on cut.

Vinegar tenderizes meat.
