They are quite cheaper now. Some Rs. 30 per kg now. But they are likely to go over Rs. 100 on Eid eve.
How can we store them now? Whats the best way?

Re: How to store tomatoes???
Store tomatoes in a cool place at room temperature. Stored this way, they should keep for five days. Avoid refrigerating tomatoes.
Re: How to store tomatoes???
Yes mostly we need them for biryani and karahi on Eid. But we do not have much place in the deepfreezer. Can we make a paste and then freeze them?

freezed tomatoes r perfect for anything that u r cooking.
yes u can make paste but i think whole tomatoes r easy way coz in case of paste then dont put it in shopping bags, put them in air tight jars and then in freezer.

Refrigeration deteriotes most of the flavor and texture in tomatoes

I think this is what I was looking for. Thanks.
Re: How to store tomatoes???
^^ straining 5kg of tomatoes must take a long time. :(
You can also make an alternative paste without vinegar.
Cut whole tomatoes in quarters and fry in a large pan in alot of hot oil, with salt. e.g. if the tomatoes r 2 layers deep in a pan, 1 inch level of oil.
When all the tomatoes r boiling and a little drier, chop finely in a food processor, or blender. Its nicer to have them chopped in small pieces than a paste.
Once processed, add it back to the pan and boil again until the oil separates from the paste.
Store it in clean DRY jars that have been soaked in boiling water, while the paste and jars r still warm. Ensure there is a layer of oil over the top.
This will create a vacuum and no germs should grow in the jars.
Best to keep in fridge, if not, then in a dark cool cupboard. If using, keep opened jar in fridge.
Also, u can make a whole load of masala (like fry garlic, chilli, spices, add tomatoes, mash and wait for oil to separate, and then store this in jars in the same way. I do that and it lasts for ages.
