how to smoke with koila/charcoal???

Can anybody guide me on smoking or adding duwa to dishes like Bihari kabab? I did once before and it was perfect. I did today it was horrible. Perhaps I didn’t burn the charcoal long enough.

You have to have a gas stove otherwise it gets hard. Alight the coal, place almunium foil on the cooked food and pour a drop of oil and quickly put the lid on the pot.

i heard that the charcoal we get here is not same as we get in pakistan.

I use the same coal piece a few times .. and the smoke gets better and better ! it starts burning out after 3-4 uses then I throw it away ..

Put it on the flame directly , change sides a few times carefully .. give it about 5 minutes to heat up properly .. when done either pop it in a small cup or foil like someone said here .. please ensure you have already kept the cup or the foil piece in the pot .. place the heated coal on it , put a few drops of oil on top of the coal and cover the pot immediately .. let it be for 10 minutes .. remove the coal and the foil / cup and cover the pot and let it for for another few minutes so that the smokey flavour settles down in the dish ..

do make sure that the coal you are using is natural and made from wood.
there are different types of coal available in the market and some are already infused with fuel…that will totally destroy the dish you are making.

Actually there 2 kinds. One requires lighter fluid and the other does not. I purchased the kind that does not require lighter fluid. However if you could get some from Pakistan that would be even better.
