Re: how to make the perfect Aloo gosht..

I use the pressure cooker for my gosht (mutton) for 3 minutes. Add the potatoes and put the lid on to soften the potatoes and mix with the meat flavor. Haven't had any badly cooked aloo gosht yet :)

Re: how to make the perfect Aloo gosht..

I use mutton ka gosht-and 'prep it' as you usually e.g. bhun the onions and masala, add tomatoes create a bit of sauce and gosht and 'bhun' for a while. Once I've 'bhunned' (is that a real term or made up). I add water to the pot, allow to come to the boil and boil gently for 40 minutes on the stove. I then add potatoes for 5 minutes, and then transfer it to a slowcooker. The meat never overcooks or breaks up-and the same applies to the spuds. You add less liquid too as slowcooking takes less liquid to cook til tender.
