Shawarma is one of those foods I dont like to eat (I like most food). Dont know what the fuss is about.

If I had to make it at home, I would just steam meat marinated with lemon, garlic+ginger paste. Cut it in small pieces, mix together with white/pink raddish+onion+thin garlic mayo salad and make rolls of that filling using thin pita bread.

I've had shawarma / shawarma platters in UAE from Labenese and other cafes but nothing striking in the taste. I had one made up of camel meat when I was a kid. That one had a different taste so not bad. Never had one in Saudia. Alot of Pakistani food was available in Makkah. Also have tried Turkish shawarma in Pakistan (Doner roll at Nisa Sultan). The taste wasnt much different than the shawarmas in UAE. And there are shawarma stalls at every street in Lahore catering to Pakistani taste. Dont like those either.

In Arabic food, I only like Hummus, Lahm Majboos and Lamb Sheesh Tawuq, that's it.

Pakistani food is the best in the world.

what does camel meat taste of? also is it like rubbery/chewy? I feel like it will be.

Marinate chicken thighs and breast with a paste made of light olive oil, garlic, fresh oregano, salt/pepper, lemon juice and zest, coriander powder and red pepper flakes and a bit of cayenne pepper. Make the marinade separate and reserve some. Let it marinate for ages. Cook the chicken whole and fully. Remove from the heat. Chop it up with ur knife, crank up the heat in ur pan to really high and add the peices back in, cook it stirring until they get nice and brown and toward the end add the remaining marinade.. cook for another minute on high heat and remove from the flame.

Serve with rice/in a pita pocket... add some fatoush on top.

Shawarma is generally hard to make at home... theres a reason shawaema from shops tastes so good. The chicken/meat is basting in it's own fat/juices/marinade in those rotating thingies. It's hard to recreate at home.
