The first video shows how to roll out the dough, but that, frankly is the easy part. The hard part is getting the right consistency of the dough and maybe it has to do with the kind of flour one uses or the type of wheat that the flour is ground from. Does anyone know anything about that?

I've honestly tried every flour, I usually buy the one that is on sale, what I find helps is to microwave the flour before adding water, just for 30 seconds until the flour is bit warm and also mixing with warm/hot water, also when you knead the dough, be sure not to knead it too much or too little, I usually knead for about 10 minutes, I've spent quite a few nights trying to perfect my roti, lol.
However I do always use durum atta.

Practice makes perfect. Also i find it helps if Atta is fresh and make rooties on meduim heat (not high). good luck.
