Thanks again for your information, now, National Pizza I have never heard of, but Pizza Pizza I have.
I wonder if you can tell me what type of flour you used to use at Pizza Pizza,
from what I understand, pizza joints do NOT use all purpose flour… instead they
use a high gluten flour.
The depressing part of this, is trying to find this anywhere… it’s impossible to find. Pizzeria places will order large amounts of high gluten flour, so I guess they order directly from the companies that make flour in our region.
I’ve love to hear more from you on this topic of high gluten flour ![]()
