How to make pizza dough at home...

Hi :

Used to make these kind of things ages ago…thought woudl shar eit with you obviously took out the part with “WINE” and stuff;) emailed this one to a lady friend and just copying and pste here as well.. might teach u more good ones… till then adios

I will teach you how to make a dough at home for Pizza.

Well different people make pizzas differently. But I will give you my TYPE of recipe which is suited to my taste . Please feel free to make changes accordingly.

Ingredients:-

Yeast (pata naheen urdu main kiya kehtay hain ) 4 ½ tea spoons

Little bit of Gingerale (ye aik soda hota hai , aap 7up bhi use kar saktay hain) probably quarter can or half, its upto you.

2 Teaspoons of sugar

4 cups of flour

1 tea spoon of salt

¼ cup of olive oil (or any oil , I prefer olive oil)

1 ½ cup of WARM Water .

How to Make Dough:

Take a mixing Bowl (Donga in urdu);). Put sugar first , then add yeast , wait for 5 mins so it can mix then add warm water in it, mix it well then add , salt olive oil ,gingerale or 7 up mix it well , then at the end pour the flour slowly and keep mixing till all the flour is mixed then mix for at least 10-15 mins . If the flour sticks to the bottom or the sides of the bowl then that means you have to add little bit more water. So add and mix till it doesn’t stick on the side. But the more you mix the better result you will get.

Take it out from the bowl cut it in to to pieces , make it round like roti ka pera and place it in something round which can be covered tightly and place it outside for 10 mins . After that place it in the fridge for the whole night because that yeast will make it rise, well it takes practice to be perfect on pizza making. The next day you will get Your perfect. Dough.

The reason why you put gingeral/7 up is the kind of taste you would like to give to the dough you make for your pizza.. this is the point which makes a different in good pizza and tastless one. Allthough yeast does the trick to make the doughs shape and size but 7up/and gingerale is something suited to the tastes of customers or in my case suited to my own taste. give it a shot u wont regret , feel free to add some PARSLEY as well that will even make it betta..

Thanks for posting this moimoi. I was looking for a good dough recipe. Can you please tell me what temperature you use in the ovan? Do you use pizza stone to make it more soft?

I believe you are referring to when you make a pizza outa this dough..right Jal? well if thats the case then once i make the dough i throw it in a bowl cover with plastic tightly and throw it in a fridge over night.. next morning take it out make a pizza ROTI outa it (use lots of flour) , poke it with a fork(to eliminate the chances of having BUBBLY pizza):P. cover it with pizza sauce throw your topping on it , cover with cheese and throw it in oven on 300 Degrees for 20-30 minutes. (thats home ) .. in stone oven thats totally different we cook it at 350 for 15 mins.
oh yea make sure to throw it on pizza baking tray :P. and top the tray with olive oil so pizza dough wont stick..

I live in Canada, and wonder where you live ? … I ask this because I have asked numourous people on a huge pizza making site in the United States and nobody uses 7-up ( seven up ) or Sprite, or either gingerale.

However, in Canada, this seems to be a main ingredient in pizza dough. I remember about 10 years ago while in Montreal ( Canada ) I was talking to a pizza guy in a pizza place, and he told me they used 7-up, I thought it was kind of strange at the time, but also interesting. Yesterday I did a Google search for 7-up in pizza and came across your post - wow… so this confirms it for me now.

By the way, - I am very curious to know how you found out that 7-up is so good in a pizza dough… do you perhaps know a person who makes pizza ?

Anyway, this is a great forum. I notice it is located in Pakistan, so don’t know if there would be anyone from the United States on this forum, or for Canada for that matter, but I had to sign up to leave you a comment and question :blush:

We always follow the instructions on the back of the pizza/all purpose flour bag and it always comes out perfect.

It’s so good to see so many mard hazrat so actively participate in Life2. I think I’m gonna make my future hubby visit Life2 for a while before I say ‘yes’.

Perhaps I should ask the resident Life2 mard hazrat to help me gather a list of links where they have been leading the threads. It could be very helpful for me in the future. :blush:

There is a huge taste difference between Canadians and Americans. Frosty People do use gingerale and 7 up in pizzas in USA but not in every ‘regular" pizza store of restaurant only high "Class’ ones do use it. Infact I believe this recipe to add an extra taste to pizza dough was brought to us by US people but who knows we guys just care bout good taste. Yes, in montreal all the pizza stores or i would say most of them use Gingerale more than 7-up.

When I used to work in National Pizza then i used to make Doughs every night. In the process I have learnt great recipes of making different TYPES of doughs ..with 7 ups, with gingerals, without these ingredients and finally took me 2 weeks to drill down to this point" Gingerale is essential to pizza taste":slight_smile:

I wonder if you can tell me what type of flour you used to use at Pizza Pizza,
from what I understand, pizza joints do NOT use all purpose flour… instead they
use a high gluten flour.

The depressing part of this, is trying to find this anywhere… it’s impossible to find. Pizzeria places will order large amounts of high gluten flour, so I guess they order directly from the companies that make flour in our region.

I’ve love to hear more from you on this topic of high gluten flour :slight_smile:

ahh montreal. c’est une belle ville. J’ai habite au montreal pour 7 annees. C’etait tres intresant. Parlez-vous Francais?.

National pizza does not exist in montreal I believe but it really uses great recipes . small pizza stores always work hard to get to upper level of “fame” so they always try different recipes , ingredients which is alwys interesting .

As far as pizza pizza goes their dough comes premade. it s not like they make it in their stores their main “center” sends out to all of the stores so basically what they do isjust cut it proper forms and its all set to go.

As far as small pizza stores go.. they order their flour.. all the ingredients and each store not just the whole company , each small store has their own MAGICAL recipe . Pizza person would never share this recipe even with their employees.. so what they would do is that they bundle up all the ingredients in terms of spices in a packet for you for each day so what cook does is just throw that while making dough this way they hide the recipes ingredients.

Flour= Now this is some toipic which is so “Secret” as far as the pizza stores go .I have to agree with you on this matter the kind of flour they use . I totally forgot the name of the flour but i can find this out easily for you. Will find out the name of this flour and will post it here for you soonish. They order from the wholesales . yes its high gluten flour. Honestly small pizza stores care less about the quality of flour . u dont have to use gluten flour u can just use the simple one meaning "All purpose flour but this varies from store to store and the amount of investment they can put in for Pizza dough and flour:)

I know that pizza pizza uses high gluten flour and I am aware that none of the small stores use High gluten flour for the dough. You can just make ur life easier by using all purpose flour trust me it tastes as good as the other one as long as you have the right recies in there. I remember that i gave out one recipe to my brother in Montreal ages ago..shhh dotn tell my “Manager”..lol..and he did pretty well with it. hehehehheheh .

Forget bout it frosty, you wont find this info just like that. As I mentioned earlier this information is always kept “hidden” but lets EXPOSE them right now!!!lolz.you will barely find info regarding this matter on the net. I will keep my quest alive for high gluten flour though, I did try it once, I bought a small amount of it at a Bulk Barn, and the taste was much more like a pizzeria than the all purpose… hmm, I guess it depends on what we like. However, high gluten flour is much more $$$ . All purpose is very inexpensive when you see the price of high gluten flour… yuck :frowning:

I guess I am not surprised that Pizza Pizza doesn’t make their own dough, I should have known that, as most franchises have most of the ingredients brought in by truck, just like Pizza Hut.

However, yeah, little pizza places that are not franchises, yes they make their own dough, which is great.

-Well the thing is that first of all its personal preference I believe. You can have allpurpose.. and make it that good so it tastes million times better or u can take gluten one and make it so bad that it will taste worse then all purpose. Yes i have tried gulten one as well and hoenstly again its your own pref I didnt like that. but feel free to use it if that brings more “GOUT” to the pizza:0

-Well pizza pizza likes to HIDE their recipes jut like other ones. No doubt pizza pizza make great pizzas. all stores get their doughs from the “head Office” made somewhere else. so the people there can never be sure whats in there. I honestly think they put milk in the dough i have tried it as well and it tastes like pizza pizza dough
