Here is what I do for a quick lunch:
Boil your egg noodles and keep them aside. Chop up some garlic, an onion, pepper and a tomato, try and cut them all in strips. Heat some oil in a pan, in goes garlic, I like to put in some crushed red chillies, then after a few seconds rest of the veggies. Let it cook for a few seconds and keep stirring.
I always keep a frozen microwaveable veggie mix at home. This has peas, carrots, green beans and sweetcorn. I microwave about half a cup of this with a tablespoon of water. Once the veggies are just about done, remove any water and add them to your pan.
I'll add about 5 large tablespoons of soy sauce (I usally make for 2), and cornflour if needed. (Mix cornflour with abit of water if you use it). Then add the cooked noodles to the pan aswell.
Give it a good mix, and it's all done. I sometimes fry an egg separately and add it to the top of a plate of noodles when serving .
