Can some1 tell me please when you make curry, how do you get oil to float on top. Mine seems to mix in the curry, so i find it hard to drain the oil when cooking is finished. Am i doing something wrong?

Turn the heat off and let the finished product rest for 10 minutes and oil will separate.

When u mix masala, onions, garlic tomatoes etc, are you suppossed to wait and mix till oil is released? Also, when u add meat/chicken are u suppossed to keep mixting till very dry before water is added? I don't know how people get the oil to float on top of curry. Is there some secret i don't know about?:) Even after ive cooked, oil just seems to mix in with whole gravy/salan rather than float on top. Sorry, hope i make a bit of sense.

How do you know when uve bhoonified the meat, and its time to add the water? Are u supossed to wait till all juices from meat have dried and only oil remaining.? Im wondering if i dont bhoon the meat properley its not reached that stage. Im sure a long time ago when i saw one of my friends cooking, when he put the water in the oil came to the top straight away.

when the meat is bhoonified, the mixture will start sticking together (and to the spoon) and the oil will come out from the sides.....then u know the meat is bhoonified and u can add the water
sometimes when i think something is bhoonified, i bhoon it for like 5-10 minutes more just to make sure

Yes taffy if u dry up the liquid really well till it turns to a thick paste u should get the desired results after adding the water.

Thankyou so much every1 for your replies:) I think when i cook next time i think ill add a bit more patience to my cooking and maybe ill see better results:) Maybe my problem is that i don't bhoono properley.

why do u want oil on top of curry anyways?
oh i have a question: when a bhooni hui dish is made is the oil showing up on top of the curry a sign that the meat/veggies are fully cooked?

i think when you see oil at top of curry, i feel that it looks nicer, and also it is much easier to drain off.

i alwaysssssssss hated the bhooning part....i dont have patience either....but the better its bhooned, the better the taste (and no smell of ghosth)
i think that u have to press the meat with a knife to make sure it is tender....the oil at the top just means its bhooned well (i think)
