I want to increase my vege intake, but how do you prepare your vegetables keeping it healthy as well as mainting its nutrients and ofcourse making it taste good too. Recipes would be appreciated. Thanx

buy GreenGiants Frzoen veggies. they've various assortment of veggies in each bag. so u just microwave it and season it to ur tast. i love it!!!
I love veggies. These are how I eat them:
Steam the vegetables. If I am really hungry, I eat brown rice with the steamed veggies. Add onions coriander leaves and green chillies (all chopped). Drizzle olive oil. Add salt black pepper and herbs.
Slice all the veggies lengthwise or diagonal. Very quick stir-fry veg in olive oil. Add ginger-garlic-chillie paste. The veggies should still be crunchy and must retain the bright colours. When done, add salt pepper and herbs.
Green-green salad. Put some french beans in open saucepan with boiling water literally couple of mins. Remove them and heat oil in a frying pan. Add the french beans for a minute or so, with touch of salt and garlic. Remove. Must be crunchy and bright green.
Boil green peas in open saucepan. If you add a touch of sugar they will retain the green-ness. Colour will change if you cover the pan.
Take individual salad bowls. Arrange lettuces to the shape of the bowl...slightly sticking outwards...use different types lettuces with varying shades. Sprinkle salt pepper. Now add the french beans. And on top add the peas. It looks so good if you ensure the lettuce leaves form a kind of bowl shape at the bottom. Amazing taste. Surprisingly, my daughters devour it with mash and fish
Ideal is to eat as soon as possible after they are cooked.

Should consider all type of veggies including green, pulpy etc. All veggies have their own nutrient content.

Make soup. Mix them with fruit in smoothies.
its a dip made with mashed avacado mixed with, onions, chillies and other seasonings. its usually eaten with tortilla chips

In order to get the most in terms of nutrients from your food you want to eat it as fresh as possible. Have lots of salad with your main meal, don't overcook vegetables, drink vegetable juices (carrot juice etc), cut veg into strips and have it with dips, make a stir fry with wholemeal noodles/chicken/fresh veg - cook on a high heat very quickly to lock in the nutrients to the veg!
