How do you do this? Tinned foods never appealed me so I always try to use fresh but these beans are giving me a hard time!
I soaked them overnight then cooked in a pressure cooker for so long but they still have a kacha and a bitter taste inside them? How long do you cook them? The canned ones are sooo soft and that\s how I like them but mine always remain sakht and bitter no matter how long I cook them!
Help please!

What beans r they? NEVER eat uncooked kidney beans, they have a toxin in them that is poisonous.
If the beans r hard, add some baking soda to them while they cook.
If u put salt in pulses before they r fully cooked, it will make the skins tough and hard.

Rupay they are kidney and black eyed beans. I don't add salt in them, use them mostly for salads.
I'll add baking soda next time and will let you know how it goes.

My mom makes really yummy black-eyed beans salan. I asked her about it now. The quantity of the ingredients will vary based on how much you plan to cook. But u will use the same spices which are included in most desi salans.
I medium onion, chopped
Garlic (according to taste)
1-2 medium tomatoes chopped
1 teaspoon ginger paste
Green chilles chopped (according to taste)
salt (according to taste)
1 tsp chilli powder
1 tsp garam masala
1/4th teaspoon haldi
Prodedure: Fry the onion, garlic, and tomatoes in pot. Add ginger paste, chillies, salt, garam masala, chili powder, and haldi. Add the soaked the black-eyed beans. And stir everything. You're going to "bhoonify" the salan. The spices/onions/tomatoes/garlic should be forming a paste or curry. Add water and continue cooking. When the oil rises to the surface....you're done. You can sprinkle garam masala on top when done. And adjust the spices in the cooking according to your taste.

I like red kidney beans straight out of the can just as they are. Those are the uncooked dangerous ones??

We usually cook it two different ways. In one, you just add everything to the red beans and then pressure cook them like daal, followed by pyaaz ka tarka.
OR
Saute the onions.Add tomatoes, garlic paste, thinly sliced ginger(or ginger paste),red chili powder, salt, turmeric powder, a little water and cook it till it becomes a paste.
Add half a cup dahi to it and fry it some more. Than add boiled red beans to it. stir fry for a while. Then add green chilies(chopped or whole, depends on your preference) .Add a little water, cover it with lid and let cook on slow fire till done. depends on how thick you want the curry to be.
Hope that helps.
P.S. You can also add some coarsely ground coriander powder if you like.Goes very well with this curry.

I made it only once with the first method but don't know where did I go wrong it was such a disaster! :( and it took my sooooooo much time I was really frustrated in the end :o
Any ideas on how to store cooked beans? Just putting them in the freezer would be fine? and specially if I'm gonna use them for salads?
