My mom cuts potato in 1/2 and sliced them medium thin. In oil she adds the potatoes and a sprinkle of zeera and sautees. She adds salt/red pepper to taste and sautees a little more stirring constantly. Then she addes roughly chopped onion and tomatoes, mixes and covers with a lid and turns fire to low. They slowly cook and tomatoes/onions cook down. I like them that way for breakfast, and the salan way for any other time.

that's so cool - allo on the tawa. Never seen it done but will try it with the imli.

yes i leave them firm and i don't mash them too much either...i just break them in small pieces with a fork.

you can use lime juice instead.....there was a man with a small cooked food shop in Lahore and he used to make aaloo like this. I used to watch him preparing aaloos on a tawwa. :D
Cut potatoes in rounds, fry for a few min, add spices (i even add chat masala), lemon juice, tons of diced tomatoes, and some imli or anardana powder. Add cilantro at the end.
I do, I use the actual achaar liquid n bits and add it to the masala...pretty good.
Hey dumb question: Do you guys use imli paste or do you soak fresh imli and work with that? Also can I use Imli chutney if I dont have Imli?
Potato is an awesome vegie actually ... loved by everyone , every race and has so many variations and it tastes totally different in each variation.
Roasted potatoes: Wash and cut in thick cubes .. one large potato into 6 pieces . Dont peel the potatotes. Marinate them in one teaspoon oil, salt, red chilli powder , garam masala and mixed herbs and keep aside for 10 minutes ...
Then in a preheated oven , put the potatoes in the pan and sprinkle some more mixed herbs on the top and some garam masala to give it color .. leave in the oven for 20 minutes ... when done , sprinkle cheese on it and back in the oven till cheese melts ...
I made this today, turned out yummy. Made it with potatoes’ skin on, didn’t add anardana and tomatoes. It turned out a bit tart for my taste buds, maybe I added too much imli ka pani.. anyway I had some leftover coconut milk from yesterday and I added it to the potatoes and it balanced out the tartness pretty nicely plus added flavor.

mine is really really simple ....
peel and cut potatoes in bite size pieces.
heat oil.
add zeera ... stir 30 secs.
add potatoes ... stir approx 2min .. or till potatoes are slightly fried.
salt
red chilli powder (sometimes I use crushed red chilli flakes)
water to cover potatoes cook till fork tender. bout 10-12 min
add fine chopped green chilli and fresh coriander .
Peel and chop potatoes and boil. Once boiled add two a few beaten eggs, chopped onions, and plenty of seasoning (and chillies for the spice lovers) You can also chop up and thro in any spare veg lying around and pour into a frying pan. Tip here- if you like your omlettes nice and thick then cover with lid for about two mins and it will rise like you've never seen before. Cook on medium for a few mins each side til golden. Simple and yum :)
Also mash and season well to put on top of some cooked spiced mince for a quick sheperds pie :)
How about just making fries and sticking loads of chaat masala on them
My MIL mentioned once that when my other half was little she would cut potatoes into strips and cook them in a little oil on the tawwa and add a little salt and pepper-kids seemed to love it.

My mom fries thinly sliced potatoes with some onions. She adds zeera. And then she takes some yogurt and mixes it until it's smooth...and to this yogurt she adds spices like chilli powder, garam masala, etc. She adds the yogurt to the potatoes and keeps stirring...this makes a curry.
She also makes makes two versions of potatoes with egg. Sometimes she'll make a curry with boiled potatoes (kind of like aloo gosht minus the gosht) and add boiled eggs to it. And other times she'll make a scrambled egg and aloo salan.
We also ass thinly sliced fried potatoes to omelet....which is my favorite way to have omelet.
