I think he will be very desi mindset, but question here is , are you trying to find or avoid a particular mindset in this person? coz that can vary person to person.

Being born in Pakistan can still produce men that don't have typical Pakistani traits - and even being born in the west isn't truly going to make him modern.
Everyone is quite different in how they think. I would just get to know him and get his opinion on things - like what he feels about women working, being independent, etc and see what he answers.
