I always bought canned beans. So basically I don’t know how to boil beans. Of course dry beans are more economical and healthier . That’s why I’m interested the proper way to do this . Why is baking soda necessary?

Soak them over night. Boil them either in pressure cooker or in a regular pot, make sure your water to bean ratio is 3:1. Boil them in medium low heat until beans are tender.

You don’t necessarily need baking soda, but it helps speed up the softening process. Boiling dry beans requires time, so you bring it to a boil with all of the flavorings & then simmer covered for a couple of hours until completely tender.

Does anyone know the exact procedure? How long should they be boiled ? 1 hr or 2? I did soak overnight and boil but they were flavorless. One thing I did was combine 3 beans - 1 cup each of kidney, black, and white beans. I used half for a salad recipe and froze the rest. I wasn’t happy with the results. They looked and taste different from canned beans.

I don’t remember the exact time b/c it’s been a while since I’ve cooked dry beans. The easiest way is to put it in a slow cooker. If you choose to cook it on the stove, just check it every 30 mins after an hour has passed. Also, I believe that salt makes beans cook longer, so leave out the salt until they are tender.
