how to bake chkn xcatly?

hii galzz,can any one of u tell me a very gud recepie of baked chicken?? bcz wen i bake chkn its upper layer gets so hard or dry type,although i do apply oil slightly but no use.do share ur xperience?

always cover tray with alumnium foil..it will keeep chicken very moist,,

Try to bake whole chicken in oven bag ,it will be soft naver hard or dried and in the end grill it for 5 min without bag.

What I do is that I take a whole chicken with the skin intact. I'll marinate it with whatever spices I have on hand (for ex Shan Tikka masala or even tandoori masala if I want it desi style or with salt, pepper, rosemary and lemon for American). You can rub spices in the inside cavity of the chicken as well as under the skin (loosen it by running your finger under it). When you're ready to bake it, preheat the oven to 350 degrees F. Get a roasting pan and if you want, cut up a lot of vegetables (i.e. onions, carrots, celery, zuchini, potato, etc) and place it in the bottom of the pan. Drizzle a tiny bit of olive oil, a few pats of butter, salt and pepper and stir them around. Place the chicken breast side up on top of the vegetables and drizzle some oil and place a few few pats of butter on the skin. The rule of thumb is that you bake chicken 20 to 25 minutes per pound. So a four pound chicken would be in the oven for about 1.5 hours. I don't cover it with foil, but resist the urge to constantly open the oven door to check on it (that will mess up the chicken). The chicken comes out so beautiful and so incredibly juicy. And the vegetables are ready as a side dish as well.

Herb bakes chicken is nice raat ki raani. Also if you need more flavor, I find that fresh basil leaves/fresh oregano chopped up with garlic is very good if you rub it onto the underside of the skin then all around... Also you can sprinkle with Mrs. Dash Spicy seasoning all over the chicken rubbed with olive oil.lemon. It comes out very yummy.
