I need to email my professor who was also my supervisor and two teachers, to be my referees, but the thing is i don’t know how to address them. It has been more than a year since i emailed them ( i.e., i only emailed them when i was their student, never afterwards) and i had a very good rapport with them so i just started with either Hello Dr/ Prof xyz or Good morning back when i was a student. Now i don’t know how to start the letter. Should i just say hello, good morning or Dear dr … ( i don’t know but writing dear dr. feels weird to me). Also i need to write a few emails to some of my potential supervisors how do i address them, do i write dear prof or something else.

My prof is cool. I email him starting with Dear his_first_name, without any professor/Dr.
Even face to face, we address him by his first name directly. I France and in Europe it is common.

You did just fine. When you are establishing communication for first time good to be formal. In their reply if they end with just their first name it's a cue that you may choose to address them as such. But better safe.

I hesitated only because its been more than a year, since i last talked to /emailed them. Furthermore I've decided that good old hello is quite neutral and formal so i might use it for the potential supervisors.

Another query
Do you think i should put down dissecting cadavers and obtaining perfect specimen under skills heading in the CV or under experience or omit it all together. Since my future research might involve dissecting, do you think it's better to mention it or is it understood that since I'm applying for that specific area so i should know how to dissect without bringing it up in my CV. Any thoughts would be highly appreciated.

If you are good at something, you should state it clearly in ur cv. U said u had perfect specimen. That is a unique skill and shoukd be presented as such.
No harm in putting it down in experience section also.
