how easily do you make

rotis?

i’ve used a plate as a template :naak: hard times. any tips to get mine round?

Re: how easily do you make

When you use plate as a template and cut around it, either you exposed the edges of roti or press them too hard and that interferes with the natural cooking process of roti and makes it half kachcha ...

see, I ruined your process in 2 lines.

Practice...practice...practice

Re: how easily do you make

ive been practicing for abt 2 years now

Re: how easily do you make

Use divider/compass for perfect roties every time. It is also known as parkar in Urdu.

Re: how easily do you make

Make sure your dough is kneaded well...round roti takes time to perfect and TONS of practice.

My poor grandmother spent a LOT of time teaching me rotiyan...hers were perfect...big, round and soft. Mine are nothing like hers but Ive managed to figure out how to make a round roti.

Re: how easily do you make

^Yep, Reha is right.... dough has to be kneaded well and it takes a LOT of practice. Also, the pairaa has to be made a certain way.
I make a long roll with aata and then twist it all around to make a pairaa, then flatten it ... ugh, dont know how to explain it but if you get the pairaa in the right shape, your rotis will automatically be round when you roll them out with a bailan.

Re: how easily do you make

I agree with the ladies…you have to knead your atta quite well…my best rotis (yes, they do turn out perfect sometimes :teary1:) are made when the atta is quite stiff.

I posted a video around here a while back…let me go find it…

Re: how easily do you make

i even tried a compass but wen i picked up the roti it all went dodgy … :bummer:

Re: how easily do you make

:rotfl:
Mum made me start making rotis when I was about 14-15 so I have about 10 years experience.

Atta has to be wee kneaded and slightly stiff,
What I do is put a little bit of butter on my palm to make a film, take the atta I need for the pera in my left hand and with my right hand push the edges into the centre to make a night neat ball which is covered in butter oil.

Then I dip it in dry atta making sure it is well covered, this is then flattened and excess flour shaken off.
Now time to roll it out, making a roti which is about the size of my hand, cover both sides with dry atta again shaking off the excess and rolling it out further. Pick it up flip it between your hands and then place on the tawa.

Once one side is cooked as in you can’t see any wet atta on the surface turn it over and cook there, this side will go a nice light golden colour and have little puffs, then it over again and it will start puffing up in larger areas, I use a cloth pull the tawa back and cook the roti over the flame till it is all puffed up be careful not to leave it there to burn you have to keep moving it round and never press down too much on the roti or it will stay kacha
I hope that was a detailed enough and makes sense but 8 out of 10 of my rotiyan will puff up with this technique, I’ve even taught both my sisters in the last few months and they are 19 yrs old

Re: how easily do you make

Here’s the vid:

I find that if i don’t fiddle about with the roti too much whilst i’m rolling it out (e.g flipping it over) then it turns out pretty good. Let the rolling pin do the work, apply light pressure and it should turn out ok.

Good luck!

Re: how easily do you make

Now I have no excuse to master this :naak:

Thank you children!
