how do you make a layered paratha

my husband says my paratha tastes like fried roti…

anyway, i try layering it, by rolling it out and then twirling it around but i think im doing it wrong…so tips/videos please.thanks.

Nadz, do the following step by step :

  • Take a thick Pera .. ( if you make thin paratha, it loses its layers , so you want it to be slightly thicker then the roti )

  • roll it out to the size of a paratha .. then spread a thin layer of butter on it .. not oil , but butter .. sprinkle dry ata over it, like almost one tsp dry ata ..

  • start rolling it into a long strip

  • now make the pera again by rotating the round snake strip, ensure that you round each circle on top of the previous one , so that it will create layers ..

  • now press it gently and leave aside for just a minute ..

  • Then press it more gently , and , thin out the corners of the pera with your hands ..

  • Now ensure you put enough dry flour on it and start flattening it out into a full fledge paratha with the rolling pin. dont put too much pressure , or else you will kill the layers .. Just do it as gently as possible .

Now , heat the tawa smoking hot, pout oil on it, when oil heats up fully, turn the heat to medium and put the rolled out paratha on the tawa .. pour just a teaspoon ful of oil on the top and spread it with the spoon or a brush so that the oil is layered equally.. now flip the paratha .. let the other side get done .. flip again to ensure its fully cooked on both sides ..

Soon you will notice that it will start fluffing up in certain places .. and start crisping up in certain places .. that means paratha is almost done .. keep a few more seconds and then take it off the heat or it will start hardening up if it remains on the heat any further.

Enjoy the crispy, layered paratha

I follow this pattern for folding my paratha and it turns out to be Real Lachha Daar paratha!! Hope it helps.

when you spread your peda, sprinkle some salt, oil, and then Khushka… and fold it the way she is doing in the video.

I have never made paratha before, but I really want to try. Do I make the dough the same way I make dough for roti? When I make dough for roti, I use 2 cups whole wheat/daram atta, and 1 cup all purpose flour. So would this same dough work for making paratha???

Yes Saima, the same ata will work out with the paratha ..

Though mom and other senior ladies , they always used to make specially customized ata for the paratha's like adding a bit of salt and oil in the ata while kneading it ..

But I dont do it, purely coz neither salt not oil is any good for health , so no point increasing the intake of it .. Butter inside the paratha and a bit of oil that is thinly spread with the help of the spoon or a brush , works brilliantly !

@ CB..I made over a dozen parathas yesterday using your method, and they came out layered, fluffy and delicious. I realised that my 'pera' is too small, and that I roll it out way too thin. I also don't use oil immediately, just lightly cook on one side, flip, and then do the oil/ghee bit.

but now I WANT to eat crispy fluffy paratha.. .will make today:snooty:
