Ive got some recipes which say you need to ground onions to a paste, then fry. I’m not quite sure, as ive never blended onions to a paste before, only garlic and ginger. Wouldn’t blended onions be unsuitable for frying ?

No, my MIL first blends the onion before bhoonafying. It works fine, but you need to put bit more oil for that purpose. But it makes a smooth shorba.

they fry okay, they turn brown just like the other onions do.

It was actually a recipe for kofta salan, i'll try blending them 1st with garlic and ginger, then i'll let you know how i got on. Its just that i never done the onions like this before.

nooo you dont blend it with ginger and garlic
you just blend it alone
the rest of the masala you blend seperate.
blend it alone, fry it in oil till golden brown then add the rest of the blended masala

for koftas we always use blended onions cos u want a very smooth masala. Just kep stirring while frying, u cant just leave them like you can sliced onions.

when grinding to a paste browned onions, how would you grind them , would you use a pestle and mortar, then put them back in pan, or do you put them in blender/ liquidizer with a bit of water?
