I was interested to see if any1 had any tips for me, as i never seem to be able to brown onions evenly when cooking, some will cooked whilst other bits of onion won’t. Does any1 else have this problem or is it just me! I think its an important part of cooking as the dish will have a raw taste. Even on low heat i seem to have half burnt onions and half translucent coloured onions. ![]()

sometimes the finely sliced onions brown faster than the not so finely sliced ones.. so try to stay even in ure slicing.. fryin them on low heat is the best way to brown onions, and since ure already doing that.. i would say.. fry on low heat, and when majority of slices have gone brown, take off heat.. and let the the translucent slices go brown without burning the rest of em...works like a charm :)

Yes try slicing your onions with a mandalin/slicer so the thickness is uniform. Also you may want to brown them in a bit more oil so they are all well coated and then drain off the excess oil before cooking.

you can keep stirring them from time to time, when they are cooking.

Draining off excess oil, wouldn't you be losing flavour from onions though? I also think i'm not good with chopping onions equally, so should i use a food processor for this? Thanks for all your replies.

With a food processor i feel that you get bitter onions- i dont know may be its just me :) You can give it a try.
No you wouldnt loose too much flavour but most of the calories- best of luck!

I buy the already fried onions - saves time and smelly kitchen.

Do those work well, Rukhsarbibi? Just say you are making a salan, would you add oil to the pan to the make the masala? And do they soften up on their own?

Does any1 here grind onions/garlic after they have been fried, to give smooth consistency to salan?

Well, I never did cuz they dissolve and make a nice paste themselves if they are properly cooked. But my mother in law used to do it, and since my husband was used to eating it that way. I do it sometimes myself.
