Buy a good quality aata. After much trial and error, I have settled for Golden Temple Durum wheat aata available at all desi grocery stores.
So let's say you want to make enough aata for today and tomorrow, considering the size of your family, take about 6 cups of the aata, slowly pour water [room temperature] and start mixing with hand until you make a smooth dough.

So there is a special atta for roti? I have whole wheat atta from the regular grocery store, but MIL also mentioned she gets different atta for roti.

I have used both the golden temple one (which I get from the Indian store) and the King Arthur whole wheat flour (from the regular grocery store)...both work fine.

I use grocery store whole wheat flour and my rotis turn out better then when i use pakistani/indian attas. However, I have not tried the brand niksik mentioned.
the key to perfect soft chapatis for me has been ... kneading well (5mins) .... and letting the kneaded dough rest (covered) for 15 mins or so (allows for gluten development).

in Lucknow, its made more professionally which is bigger and thinner…even in my neighbourhood street dhaabaa used to make huge thin [like a membrane] roomaalii chapaatii

rumaali roti ka kabhi nahin suna, but i tried it today... bus khuch khaas nahin bani... patli to ho gai, lekin kuch der baat hard ho gai... shaed heat mein zeada pakai hai...
will try it again... but i dont like it kachi kachi :(

I have an awkward question for you guppies, I don’t have a gas cooker cos the place where Im living don’t have a gas connection that will allow a gas cooker to be installed. How do you manage to cook chapattis on an electric cooker? Aty the moment I am using a tandoor but it is a real hassle to get it out of the cupboard and a bigger hassle keeping it clean. Any ideas? ![]()

we had an electric hob for years not as good as gas ,but the rotis come out the same ...you just can't do a final flip over on the open gas thats all...
so just make the complete roti on tawa...

Hi Heer,
What you can do is try to find a pizza pan .. its flat at the bottom , hence easier to place on the electric cooker … the usual tawa doesnt sit well on the cooker plate and hence heat wont be created in an equal manner…
Once you have the pan really heated … put the roti on it … and then wait for one side to be done about 50% then flip and wait for the other side to be done 50% … then flip again and use a kitchen cloth … apply pressure with it on the roti on all sides , until it gets cooked .. change side and do the same with the cloth … until roti is fully cooked …
Used to take me about 3-4 minutes for one roti …
doing the cloth thing will give you , phulka type roti’s
