Okay this picture of biryani is the exact color I would like my rice to turn out to. I only use yellow food color and it never turns out this way! it just makes the whole biryani yellow…is this some red food color added as well? How do I make it this color exactly with the yellow and dark orange so all the rice don’t turn out one color and some rice stay white as well?

Try using saffron in warm milk + orange food color. If you want the exact color as in the picture, you might want to toss saffron+milk in the rice before layering and add orange color on the top before giving dum.

I love this type of look for biryani too! It really adds to the taste (maybe it's the fact that it looks better that makes it taste better)
Anyways, try adding the food colouring after each layer. That way when you dish is up like that (make sure to not mix it up too much), it won't all turn orange and will have some white, yellow, light orange and dark orange colours going on.

That's essentially well bhunna hua masala and orange food coloring that give it that color.

I agree! its looks def makes it taste better! and my mouth has been watering ever since!!

When you are laying your biryani. Put just a few pinches of dry food color on the top layer at 3 four different places.. That give different shades of color to your biryani.
Next time My wife makes biryani I would take pictures of all the stages. Only if I could remember to do so.

It's not about what colour or when you add it.
It's not about whether you add the colour in wet or dry form.
It's about the masala/qorma that you add in the layers.

well even i have been eating Biryani for a long time
but then i got to know that the colour used shouldn’t
be taken and avoided as the cochineal is out of insects

On the top layer, add crushed saffron and sprinkle a little dry orange food colour in 3-4 places before dum.

Color does not create taste in Biryani… but qorma, right rice with right amount of kani plus dum…
