Can you get tom yum paste wherever you are? It's a Thai soup, it is hot and sour, but don't know if that's the one you're after

Not too sure about the original recipe, but my mum makes a really yummy desi interpretation by throwing in a whole red chilli and adding liberal amount of vinegar and soy sauce. The soup turns out spicy and sour and is really easy to make.

i usually buy the ready made paste and add the fresh ingredients. Never leave out the fresh croiander, put the whole bunch in, xclean the roots well, a lot of taste comes from the root. there are lots of ingredients in the paste, i don’t know if i could find all ingredients locally so that’s why i get the readymade paste.

Not too sure of the quantities but if youre making soup for four people, we use one medium size pot. A bowlful of chicken bones (the meaty ones so that we can use the flesh too). Boil together with one small red chilli (the slim long one thats known to be very fiery), a inch of ginger, about 4tbsp of vinegar (might need more depending on how sour you like it!), 1/4 tsp sugar and 2-3 tbsp of soy sauce and a teeny bit of salt (to taste). When its thoroughly boiled, de-bone the chicken and put it back in the soup. I usually whisk a small egg and gradually stir it in the hot soup but this is optional. Another option is to make this withpre-packed fish bouillon (spelling
) and instead of chicken you could throw in a few prawns. Yum! ![]()
