Regards, Garam masala, I dislike the taste of the baahar ka garam masala so I just do a simple one : two tablespoons corriander seeds and one and a half tablespoon zeera .. I mix this up and crush it finely ... this is kept in a bottle .
for other garam masala ingredients I put the whole spices in rather then powdering them .. for example cloves , cinammon etc

my bhabhi makes all masalas at home...she is old fashioned and she thinks it's the first step in good cooking. she is really really really the best cook that i know of and i know a lot of women who cook good...i'm NOT saying this just because she is my bahbhi...everyone who tastes her food becomes her instant 'MUREED'! ... honest to God! :)

bhoonify kali mirch seeds,coriander seeds,white zeera,cinnamon stick,long on tawa and then grind....
i use garam masala for pulao only....

my bhabhi uses siyaah zeera which is darker and much skinnier and has stronger flavour.

my recipe of Garam Masala
All ingredients Whole
Coriander: 3tbsp
black pepper: 2 tbsp
black cardamon: 3 to 4
green cardamon: 4
zeera: 2tbsp
cinamon stick: 2 medium
cloves: 1tbsp
bay leaf: 1
nutmeg and mace(crush them together 50 50%): 1tsp
saffron: a little (optional)
Very lightly bhoonify all masalas except saffron on tawa, just for 2 mins so that good smell comes. Let it cool down and then blend them by adding saffron also.

Once I grinded cumin seeds without bhooning them, and it had a very very minty smell to it...so odd...dunno if anyone else has had this experience.

Strange .. I grind cumin seeds almost once a week to prepare my weekly corriander / cumin mix .. and never have bhooned them , yet never experienced this ![]()

All ingredients Whole

This is a great mix , the only thing is , black cardamom always overpowers the taste .. I dont know why ..

Yes right, You can reduce quantity to 1, Now i usually use 2

If we bhonify the white zeera it will gv the same taste
my bhabhi does saute all the ingredients...safed zeera [mostly used] is a different variety than siyaah zeera...tastes wise, they are quite different. siyaah zeera is much much better in quallity, texture and flavour...try it once and u'll know! :)
