Some that I commonly use at home:
Basil: pasta sauces
Oregano: pasta sauces, pizza sauces, chicken noodle soup
Thyme: omelettes
Rosemary: roast chicken

I am a big fan of mixed herbs … you dont have to decide which one to use where … bus pakro and daal do 
I use Sumac .. its an arabic herb , reddish and sour in taste and it tastes really well in salads … or if you are serving raw onions , just add some sumac and salt before serving and it enhances the taste so well .

princess20, in some olive oil, I add some chopped onions, garlic, fry until transparent, add pureed fresh tomatoes, salt, oregano and some other Italian spices, let it cook down until the right consistency is reached.

Basil, Cumin, and Coriander are my staples.
Bay leaf; rice, kharhi, sambar, etc.
Cayenne pepper; sauces, chutneys
Dill; soups, mashed potatoes!
